Just for your curiosity, as a musician: The way cameras and microphones captures sounds is different than what we hear, when the sounds reach a certain decibel or the microphone sensitivity to certain frequencies, the microphone fails to captures those or capture it with way less richness, because the microphone is made with materials that is not very "vibrative" as our ear timpani, probably the rain sound was way louder from his perspective and he though it would be too loud when recorded, but not... You can perceive this effect when you can hear things very very far, but when you record on your phone, you can't hear it, or when you sing to a microphone and when you extend a note fading it away, the recorded sound ends the fade faster than what you singed. It all depends of the quality of the microphone, still, microphones wont be better than our ears...

I think a strong beer ruins the meat. This is already said in the normal barbecue, the lighter beers like a Pils much better, because otherwise the strong hop flavor comes through. It would be worth a try anyway, maybe just with a piece of steak and not a few pounds. I hope you understand my German-Denglish. :-) I sleep in school. :P

Just some infos... Yves-Marie Le Bouronnec is the French master of aged beef meat. His preferred technique is done with whiskey, but with a different trick : after around 20 days of usual aging he starts the "affinage" (refining) with whiskey, in a chamber in which he disposes hay so the meat interacts with the perfumed atmosphere. He changes the cloth filled with whiskey every 10 days and plays with temperatures. This can last up to 40 more days (so 60 in total).

@@Alasswolf Thanks, I wish I knew more details, especially about temperature's evolutions. He is also very regarding about breeding (specific species and high quality food with almost no cereals) and about slaughter technic and ambiance (privatizing high quality slaughter houses and using killing technics so the animal is enduring the less possible amount of stress, although he is controversial about it as he claims to observe less physiological stress markers with throat cut than with pistols, concluding good halal slaughter is better than other ways).

Oh, and first 20 days of maturation are done before cutting the body in pieces. Internal organs and leather are taken out just after slaughter of course, but other than that it's the whole animal that starts the maturation.

I think the alcohol killed some of the bacteria essential to the aging. Just tried this with equal results. Preferred the one without.

Must say that I have seen/listened to the entire 8 seasons of GOT at least 3 times. I listened while I knit, but actually watched it after I retired, last year. My husband and I watched it together during the first few weeks of incarceration from the virus. LOVE IT.

Man I'm digging your ideas. 60 with three massive heart attacks I know grilling, smoking, marindes, BBQ, wet and Dry rubs..... used to grill every meal. Watching you I love the idea of the liquor 🤗😎.
