Excellent video! I refer to the groove where the lid rests as the moat, just like a castle moat. Also, to ensure that the moat water does not spill into the crock when water is added, either the inner ridge of the moat needs to be 1 or 2 mm higher or cut a groove (1 or 2 mm deep) in the outer ridge. As one viewer mentioned, I intend to make a weight disc on future crocks. Thanks much Mikkel.

Lovely pots. It has taken me a long time to understand that it is the attention to the little details that makes the difference between a ho-hum pot and a good one. A smaller size of one of these would be good for fermenting sourdough starter. When I was a kid on the farm my mother would make sauerkraut in 5 gallon crocks, I guess that would be about 20 litres. She would put a weighted upside down dinner plate on top to keep the cabbage below the liquid. Because of the terrible smell it made and the scum that rose to the surface I never could make myself eat any. I prefer the cabbage raw and crunchy.

I’ve been doing pottery for about a year and a half now (I’m self taught) and I’ve found I like hand building more than throwing but this video has really given me some inspiration to give throwing a try again. I’ve recently started making my own pickled veggies and I could use a crock! Thank you so much for showing your process, it really have a good idea on how to tackle this now.

Yes - recently decided to stop buying sauerkraut and make my own so I needed to make a few crocks first. Researched and basically came up with the same design except I put lug handles on the side and a loop style handle to accommodate my sometimes weak hands and I also made a pour spout on the outer rim for easy dumping of water without having to tip it far. Now I just need to make some sauerkraut or pickled onions. I used a stone ware but my friend suggested to use porcelain for the weights as they will always be submerged and it has basically no absorption percentage rate. Thank you for your very informative video - I would have had it much easier watching, learning and doing before making mine but I got it done anyway.

Not sure what it is... maybe your passion and truth... maybe its your charming accent and laid-back yet engaging demeanor... heck 4 all i kno u use some sorta glaze conconcotion on your face before shooting to give it that lil extra shine.... But YOU GOT IT MAN! What do you think of forming the lidded groove separately as a ring piece and joining it to the main pot when it's leather hard? Would that make the throwing part easier, or just add extra time for no gain? That is, instead of a 2 piece of construction of pot and lid, it would be 3 piece: pot, ring and lid. Love your videos

I did that ones with a very large - almost 20 liter fermenting crock, but I generally find it easier and safer to do in one piece

Wonderful tutorial! You are too modest saying you are not a great potter. Last year you had lots of bricks for a kiln. Did you build it?

Thanks a lot ❤️ I did not build it yet. I found out that the hard fire bricks I have is not ideal for a gass kiln. It is better to use insulating fire bricks (IFB). So I have got an old to loaddr that I, as a start, will rebuild for gas using a TDI design. The bricks I have will be used to build a wood fired kiln but as I am in a recidential area it is a little tricky as I also need to include a solution to trap the black smoke. I will off course video both prijects :-)

Hi, fabulous pottery and thanks for a great video. You mentioned liquid quartz to seal the unglazed area for the water seal. If using stoneware clay would that be necessary as it's vitrified? Im wondering would ancient pottery have been sealed?

Thanks :-) Most often you would not fully vitrify your stoneware in a pitfire but even if you did in my experience it is not completely water proof.

I always make a flat disc with a hole in the middle which I cut in half or thirds to weigh the vegetables down and keep it submerged

Did the unglazed groove work with the water airlock? Does need a wax treatment to prevent the body of the lot absorbing the water?

Yes. As it is fired to full vitrification it is water proof. Also, to be extra safe I gave it a coat of Liquid Quartz. BUT in the next versions of the fermenting crocks I actually glazed them in the groove too. You can see more about how I did this here: kzbin.info/www/bejne/kInPY6RuhMiJY6M

Nice crocks', just a quick tip thou: Even spraying outside it is good practice for your health to wear a mask. Those fine particles of glaze will be airborne all around you and even if you don't see it you will still be breathing in particles. Hate to see you become ill.
