First tip did the trick. I was doing that method before but I had the jar upright and couldn't get enough force to push the knife far enough to break the seal. Flipped the jar upside down and beared down on the knife with a lot more force and that did it.

Use an oil filter removal wrench to open different sized jars. Tap edges of lid prior, fit wrench over lid, apply pressure counterclockwise until lid pops or lid lifts in center to signify air has escaped., keep turning while keeping pressure on until lid frees itself from jar. $5 hack for every kitchen!

How does the tapping with the knife handle loosen the lid? It works the same way when someone taps the lid on a counter top and then twist the lid off easily. Does anyone know the science behind this, how the tapping makes a difference?

Number one, but use a spoon instead of a knife. The curvature of the spoon actually gives you a lot better leverage :P
