Glad to see all of you are safe, healthy and happy as your darling daughter came back just in time before the Lockdown. I would like to suggest some Penang way of cooking the prawns. Best to blanch them in boiling water, once the colour changed, drian them, don't like the water boil and boil, as cooked too long, the big prawns will not be nice, like rubber. I never cook 濑尿虾 at home, so no comment. You can try pepper, salt, 椒盐濑尿虾. I often make 椒盐虾. Deep fry the 濑尿虾 what sprinkled some tapioca flour , once changed colour, drain. Drain out all the oil, add in chopped garlic and fry to light golden with the oil stick to the pan will do, ( don't add in too much oil), then add in salt, pepper, sliced chili, green onion, once aroma, pour back the fried 濑尿虾 in, stir well then dish up. Yummy ! Penang has very yummy and aroma Baked Crabs. Take an old wok, no more in use wok, arrange the crabs into the wok, on the fire, cover it with it's lid, I add in some cooking wine when baking the crabs in the wok, after 10 mins, turn it over and " burn " another 10 mins, turn them over, if cooked, can remove. If use mud crab, it may takes longer time. Best and very aroma Baked Crab. If the legs dropped off, remove as it will burnt and dried as I love the eat the legs.
