I worked for Popeye's for a number of years and I can attest that they do not use Corn Flakes. They do a process very much like the one you do. They marinate it in a dry rub and tumble it in the sink until all pieces are evenly coated. They let it get tacky after the initial flour, wash flour and just before dropping it into the oil, they flour it once more to get that crumbly, craggy coating.

Chef, when I have left over ingredients from preparing fried chicken, etc., I make bird cake, for the starlings, they love it. I empty the left overs that have been in the refrigerator into the batter. I use the old fry oil and add baking powder to the mix. Any food that I would throw out, instead goes into the batter, meat, fat, fruits, veggies, bread, cheese, anything. Then I bake it in a huge foil pan and give it to the birds. No wasting food.

Tip: After the guacamole is made and you want to store it in the fridge, place the avocado pits on top of the guacamole before covering with plastic wrap. This will prevent the top of the guacamole from turning brown if it's not eaten immediately.

I’m going to drop my preferred guacamole recipe here: 1-2 ripe avocados The juice of 1/2-2 limes, but you can also use the zest if you want. Thoroughly mix these in a molcajete if you are fancy, but a fork works just fine if you don’t have one. Now chop 1 roma tomato or an equivalent volume of the tomato of your choice into ~3mm cubes, and mince 2 serranos and 1 árbol chili into a 1mm dice. You don’t have to de-seed anything, and I recommend you don’t. The seeds of the tomato have acidic juice that will help keep the avocados green, and the pith of the serranos have extra heat, and why are you even including them if you don’t like heat? Finally, take an entire fistful of cilantro and cut it into strips. Admire its beautiful summer aroma and add it with the chilis and tomatoes until it’s all combined. At last, taste your guacamole on whatever you serve it with, and add salt until it tastes perfect. I personally don’t add onions or garlic, but it is okay if you want to add them. Alternatively, I’ve found that you can replace these elements with any sources of acid, fleshy fruit-vegetable, and spice to create amazing avocado salsas inspired by guacamole.

🥗The pasta salad looked good enough to eat while hot. It probably would be eaten cold as a leftover in my house... and hot the first day. LOL 🥜 I'd probably use the peanut sauce with the fried chicken and have salad instead of a bun. 🍢 My grilled foods never look like this. Amazing.

My pasta salads are always a hit at picnics. You and I have a similar recipe, but diced peppers and onions with fusilli? Sorry, chef. Gotta match vegetable slices to the size of the pasta. Julienne peppers and new-moon Onion slices stay on the fork better (and look nicer in this dish, IMHO). That emulsified dressing looks fantastic, however. Will definitely be trying it out on my next go!

Anything in a burger bun we (in Australia) call a burger, but to American's is it only a burger if it's made with beef pattie, is that right ?
