Sous Vide CHUCK ROAST in the Instant Pot Duo Crisp with ULTIMATE LID 135⁰ VS 170⁰
Sous Vide means cooking under vacuum usually in a water bath for long periods of time at relatively low temperatures. Sous Vide cooking makes tough cuts of meat melting tender. Chuck is a roast taken from the shoulder of the cow. It can be quite tough and is usually used for pot roast or stews.
I cooked a 1 pound piece of chuck sous vide to 135⁰ for 24 hours then seared it in an extremely hot carbon steel pan. The results were fantastic! My chuck steak was tender but not quite as tender as a ribeye.
I cooked a second piece of chuck sous vide to 170⁰ for 24 hours then seared in an extremely hot carbon steel pan. The results were MIND BLOWING! The chuck was so incredibly soft. Much more tender than a ribeye steak. I truly enjoyed this version and would cook this again.
