Have not watched Chef John's vid for a while... kind of nostalgic .....hearing his voice is kind of therapeutic haha! Been watching since college...was working at my dad's company and decided to forge my own path, now im 37, owns 2 restaurant and getting offers left and right to open in more locations. Chef John, if ur reading. Your videos was a huge part of me learning how to cook so many different dishes, it slowly accumulated into a foundation that helped me open multiple succesful concepts. In case you don’t have an ice cream machine Put the mix in a quart ziplock bag. Fill a gallon ziplock bag 1/2 way with ice and a sprinkle of rock salt. Place the quart bag of mix inside the gallon bag. Making sure it is closed. Put on your winter gloves. Gently shake the mixture until the mix becomes more solid. Eat or freeze.

Most Excellent! I have to admit though that I really miss the old school ice cream makers of my childhood which had ice, rock salt, and hand crank. Those would really make a stiff harder product. These new cylinder style machines really do need hours in the freezer after you make it.

52:18 it’s because rice flour when you eat it raw it is inedible, Sir. Also it not that fine of a flour. It is also a type of rice flour that pre cook but it won’t have the same effect when you mix it like the raw one. I always love your show and your voice, it’s so calm that i use your video as a lullaby 😂 love you❤

Thank you. I use the same ice cream maker and cover it to speed things up. Also put the glass container in the freezer while it is churning to keep it from melting during transfer….

I make the French style vanilla and then I add a cup of spicy salted caramel (caramel sauce with a good bit of salt and cayenne pepper) It comes out amazing

RE: the ice cream sandwiches, we like to coat the exposed ice cream with real Dutch chocolate sprinkles (De Ruijter) and chopped toasted hazelnuts before we pop them in the freezer - soooooo good!

hey, i hope youll pardon my input here but im dutch and de ruijter sprinkles arent really that high quality chocolate? i imagine just mini chocolate chips would taste way nicer (and maybe cheaper if the sprinkles are imported?). it depends what kinda texture youre looking for i guess, but you honestly have my blessing if you wanna mix it up lol.

@@dannylieberwirth1784 They taste like actual chocolate, which regular American chocolate sprinkles really don't. I've used mini chips, too, but they can be a bit waxy. But, nice to 'meet' you! The Netherlands are a lovely place - we have several Dutch friends, and when travel becomes somewhat less like torture, hope to get back there to visit.

A few drips of Balsamic vinegar is great on vanilla ice cream, and probably this creama. as well. Brandy or bourbon is my favorite.

There's a way to improvise an ice cream maker from ZipLoc bag, ice and salt. Put the ice cream ingredients into a smallish bag. Put ice and salt into a bigger bag. Put the little bag into the bag with the ice. Play catch with this arrangement for a little while.

Pro cone tips: If you put a marshmallow in the bottom, it won’t drip. And, if you want to go all out, pipe ice-cream into the cone and freeze before topping with more ice-cream. That way, it’s filled and not as fragile.

I’m not buying ice cream anymore IF it contains Carregeenen (it comes from seaweed used for purpose of making ice cream other products creamy instead of real cream ingredient. Cause you know cream is “bad” for us. 😵💫 If I can’t pronounce or know what ingreds are, not using. This is yummy; just in time. OM, my mother had those glass goblets!! Now I HAVE THEM. I see you do too, Chef. No one has recipes like CHEF! Love these.

Self chilling ice cream maker is the way to go. The freezer chilled bowl machines never worked for me.The small cheap ones did well but didn't last long, so I use a larger more pricy one now.

It looks exactly like the one I have, which is a Cuisanart ICE-20P1, 1.5 quart capacity. If you do a search you can buy them online from several different places for around $70.

Chef John, my ice cream machine freezes my mixture onto itself in a very irritating way. As soon as the ice cream is churned and I’m putting it into its container the sides of the bowl freeze it way too fast and hard so I can’t get it out. What am I doing wrong? Is it too cold? What’s happening? I make ice cream often but every time I struggle with it and loose several portions of ice cream.

what he didn't tell you about imitation vanilla, no judging if you really like it but you should know... "When it comes to imitation vanilla, there's a whole lot of talk about beaver anal glands. Beaver castoreum (the goo-like vanilla-scented secretion that comes from beavers' castor sacs, located, yes, in close proximity to their anal glands) has been used as a food additive for much of the last century

@@mskitka2751 considering there are 40 million pounds of imitation vanilla produced annually, globally, every Beaver in existence would need to have its anal glands milked 24/7 which is just far too labor intensive when you can buy it for next to nothing. The reality is, castoreum (the actual gland excretion) is extremely rare and accounts for around 0.00076% of the imitation vanilla produced. TLDR; Nothing to worry about.

@@mskitka2751 first, that doesn't bother me. Second, most imitation vanilla is lab made. I know for a fact mine is because it's listed as an artificial flavor. If it was castoreum it would be listed as a natural flavor. Also, beavers don't do well in captivity, and not nearly enough are hunted to supply our demand for vanilla flavor.

Please pinch the pointy end of the cone so it's sealed, because when the ice cream starts to melt in your cone, it won't run out the bottom all over your clothes.

Yeah that green tea mochi ball, that is not how you make that dough. You must cook it in less time or at least stop and stir multiple times. Also you have to knead the dough for at least seven minutes before you roll it out. Use two pieces of parchment paper and use cooked glutinous rice flour so it doesn’t taste raw. The flour doesn’t matter as long as it’s cooked.

Yes, yes too much mixing. I got vanilla butter for me French toast in the morning. I made no churn lemon and no churn Blue berry. It uses a blender and sweet and condenced milk as an anti freeze.
