【Ingredients/amount】
Rice noodle---60 g
Boiled noodle for fried noodle---1 serving
Pork belly (sliced thinly)---80 g
Shrimp with head-----------4
Purple onion-----------------1/2
Bean sprouts(thin)-----80 g
Chinese chive---------------5〜6
Lime---1
Coriander (chopped)---desired amount
Vegetable oil----1 Tbsp
Grated ginger---1
Grated garlic----1

Salt and pepper---a little per each
Sugar---1 tsp
Curry powder---1/2 tsp
Oyster sauce---1 Tbsp
Chicken soup stock---1〜2 Tbsp
Sake---1/2 Tbsp
【Cooking process】
①Wash shrimps with head in salt water and remove their back vein, peel the shells while keeping the heads and tails, remove the heads and open up the back.
②Cut pork belly and Chinese chive into 5 cm pieces, slice purple onion into 5 mm thickness, soak rice noodle in hot water and cut it into bite-sizes.
③Heat vegetable oil in a frying pan, fry up the shrimps’ head lightly, fry up the shrimp and pork belly and take them out.
④Add garlic and ginger in ③’s frying pan and fry them up, put in noodle and rice noodle after it flavored, add Bean sprouts, Chinese chive, and purple onion, fry them all up.
⑤Add A, ③’s shrimps, pork belly, and coriander in ④, fry them all up, decorate it on a plate, grate and sprinkle lime’s skin, place a half of lime on the side.
【Tips】
*Fry up shrimps with head to bring out its taste.
*Make this fried noodle rich using two types of noodle.
