I was just about to mention the shrek glass! Had those same glasses as a kid. Got them from a McDonald's promotion for shrek forever after. Fun fact: they recalled all of those glasses for containing a dangerous level of cadmium in the paint. Love that granny though.

@Laila Julfar Actually, in Sicilia there's one different version of cannoli for each grandmother :-D Mine liked her cannoli with no chocolate, ricotta was forced through a silk cloth for smoothness and cinnamon powder was lightly applied on top of it. Gosh, I miss them!

Wonderful, what are the chances of me meeting an italian lady with 93 years old and watching her cook on a small island next to Sicily? Never. so I love this channel, it's exciting. I'm amazed by the self sufficiency of Clara! Cuts the bamboo every February and knows how to clear the interior...All for her specialty dessert! Wow! I imagine she makes her own lard for the pastry & frying, as well!? I laughed at the (large) number of cannoli shells laid out to fry - "for her family and friends" - for an Italian family & friends ALWAYS a big number. LOL! I also LOVE the use of 'summer kitchens'. Here, in the U.S.'s hotter climes, a summer cooking space would be so nice!

I remember my German Granny used to save bacon grease from breakfast in a folgers coffee can on the stove. She saved up all year for Thanksgiving and Christmas holiday baking. Nothing beats her pie crusts made with these pan drippings!!

Clara's recipe is genius and more than 100 years old. I haven't seen one like it and these are the tips this pro shared that revealed how to make her traditional cannoli that are outstanding: 1. Clara uses a large cutter for her cannoli. Most recipes use very small cutters and make cannolis less than 2 inches long or so. 2. After Clara lays the bamboo form on the dough, she dabs water just to the center of the dough where it will join together. The only part of the dough she connects is the very center. Because she uses a large cutter the bulk of the cannoli flares out on either side. That allows her to fill the cannoli with a knife, so there is no need for a pastry tube to fill the cannoli. Most recipes seal the cannoli dough all the way down the tube. 3. Clara's recipe uses only a few ingredients in both the shells and the filling. This lets the flavor of the high quality ingredients shine. She uses a natural lard, natural vinegar, a little sugar, and flour in the dough. Most recipes also add one or more of egg/yolk, marsala, cocoa powder, cinnamon to the shells. 4. Her filling is just whole milk ricotta and a bit of granulated sugar. Most recipes add vanilla, glaceed fruit, and have instructions to drain the ricotta over night in a sieve in the refrigerator. Or they say to squeeze out the ricotta in a cheese cloth to remove liquid. Removing liquid from the ricotta in most recipes is to help keep the cannoli shell crisp. Clara avoids all the complicated steps by mixing a litte plain granulated sugar into the ricotta and pressing it through a sieve. Ricotta is a lot like cottage cheese, in that it's milk curds (straight protein), in some cream or milk. By pressing the ricotta through the sieve, she is breaking up the curds (protein), which are much drier. This process gives the curds a larger surface area which increases their ratio to the liquid, (cream or milk) in the ricotta, effectively creating a drier filling. As Ben Richey commented beautifully, I quote, 'Clara got this recipe 70 years ago from a woman who was 90 at the time. This recipe is a living connection to 1860. I had to sift thru a hundred or so comments to find yours - which is about the recipe itself. Thank you. Did you actually make it? I tried another recipe from Italia Squisita that was terrible. They were not clear or incorrect about ingredients, weight, or the process but the end result was a terrible cannolo shell.

I followed the recipe and I don't think that the woman narrating gave proper measurements. Obviously the wonderful woman cooking is a master cannoli maker. But I followed the shell recipe to the t only to have the shell fall apart in the oil and turn to dust.

How gorgeous!! I’ve been waiting for this since you posted about it on Instagram. This is the first cannoli recipe I’ve ever seen without eggs (which I’m allergic to) so I’ll definitely be trying it!

@@natasham8076 yeah, it is. Time changes and it's incredible. Like for example there was a time where tomatoes were thought to be poisonous due to being acidic and back then most old recipes didn't used them either for not existing in the region or crazy ideas. Nowadays it's almost everywhere. This recipe has been passed down for almost 200 years and I really love the alternative to not using eggs in order to get such an exquisite dish.

C'è un equivoco, quelle sono canne nostrane, non è bambù. Anticamente si usava la canna, oramai sostituita da cilindri metallici.

The bamboo sticks are just the way cannoli have been fried since ages, it's not her invention, people have always done this way before the arrival of professional kitchen tools.

first of all: OMG this is an amazing channel... Reminds me of my grandmother... I remember we made the filling sweet: ricotta, sugar and chocolate chips... never heard about bamboo, granny used stainless steel tubes... love these videos... these woman are treasures! thanks for this channel!

I am addicted to this channel. I just discovered you two weeks ago and loving every one of these women. My family came from Calabria and Naples and sadly, I never knew my nonnas. Looks like Clara's frying pot has been used more than a couple of times. My favorite cream. My birthday cakes are still made with cannoli cream and I'm now 60.

She is absolutely precious. She reminds me of my nonna in Calabria. She had a similar way of making her Cannoli, I have the homemade wooden rods that she wrapped the Cannoli pastry dough around before deep frying. I can still remember the wonderful smell in her rustic kitchen. My nonna also had beautiful blue eyes just like Clara. Thank you for such a wonderful video.

Cannolo is slang form of diminutive for of "canna" which in Italian mean "reed". Bamboo plants don't grow up in Italy/Mediterranean area.

There had to be something to bring Italien - My friends mother and aunts all reached into their late 90s some are still living in Vermont, they were of Italien decent from this area and always treasured food and life style from the old country. I love Clara what a beautiful delightful enchantment - may she live forever... thank you for sharing

Montalbano is a favourite TV show in many countries including the UK. It was a touching moment when the death of the actor (and therefore the character) playing Doctor Pasquano was marked with eating these pastries. Very emotional for fans in particular and a lovely touch. U wonder if Clara was aware of the significance or fans, whether it meant anything to her etc.
