Taiwanese です, originally the one which caught my attention is from a random HK guy try some of this シャリ from some restaurant in our country, and say something like まずい (maybe this is the spark, 知らんけど)to the boss of that restaurant, then he got punched ... something like that. let me notice this cuisine and learn the word "シャリ". your tutorial is good, but that whole sauce pan of vinegar seems very hard to consume, for a person who living on his/her own. but I'll try this in Taiwan if I can get all the ingredients, thank you!
Sounds like revealing everything, that's a good starter! Trying to copy it, but the best lesson is the professional makes things look easier! Most likely outcome would be a (predictable) disappointment & re-appreciation of the experience of the masters! It's logical, isn't it, that a single look at a video can't make you like professional!
