“How are you?” is just a conversation starter, be natural, confident and polite in whatever you usually say to other people. I have given many interviews and my standard reply has always been: “I’m doing great, how about you?” Never felt as if interviewer didn’t like that response. Remember, both of you are professionals, I am sure you wouldn’t give an expanded answer if your colleague asked you the same question, similarly the interviewer is also used to hearing that normal reply.
