For me it's the head bob like "hey". I didn't really get the whole draw to make a celebrity sign something or get a selfie with them. Like it's not a meaningful interaction usually. If I got the feeling they wanted to sit and chat with me, I might get a little more excited or star struck, but it's pointless to try to stand out like that for someone you don't actually personally know.
