Good Morning Katie. Finally got to the Amish store yesterday for my flour, otherwise I'll be keeping my hiney right to home. Wishing I could go 2 months without grocery shopping besides milk. We decided to buy green coffee beans from our local coffee shop and are now roasting our own coffee beans. I am really hoping that drinking a better coffee will help my inflammation. Winter is here, we're finally getting snow along with bitter cold temperatures. Thanks for some good meal ideas. ❤ We are lovers of the mushrooms and absolutely LOVE mushroom hunting and we actually get an abundance of horse mushrooms in our front yard, so this past year we made a bunch of cream of mushroom soup to pressure can. Winter usually just makes me wanna be in the kitchen all day. 😅😅😅😂😂😂😂

🤣🤣You know what’s funny??? You noticing that cause we both got new silicon wedding bands this week- his preferred grey one dissolved when he used a solvent to switch grips on his golf clubs- so he had the back up green one but now he has a grey one again😅 and I got a thin gold silicon band to wear when I’m not wearing metal. He used to have a tungsten carbide ring. He high fived another guy wearing the same material ring- and both their rings shattered upon impact. So silicon it is.

I use the vacuumsealer to seal across the middle of some of the large bags, giving me two wide,shallow bags - great for sauces or grated cheese.

I always have dill pickles with my Sloppy Joe’s, too! Your hash with fried potatoes, onions, ham in bacon grease looks delicious, as does your mushroom soup. So often “challenge meals” on some channels just don’t look or taste terrific. You’ve conquered that!

I’ve been enjoying watching the pantry challenge by several families. I admire your commitment to use up food you have without going shopping. I am curious why several families are doing dairy free dishes. Are there dairy allergies that make it necessary to do dairy free?

Thanks for watching and asking such a good question. Personally, I have Hashimotos so when I want to eat the same meal as my family, I make it dairy free. It’s recommended if a person has autoimmune disease to stay away from dairy and gluten because of the inflammation and stress they cause to the immune system- eliminating these helps keep my hashimotos manageable. When I consume wheat and dairy regularly, I need an increase in thyroid stimulating hormones according to my regular blood tests. I also have recurring acute pancreatitis so there are multiple reasons for me to be on this dairy free diet. I also am strictly dairy free when breastfeeding because my babies do not tolerate cow dairy proteins in my milk- it’s very common actually for babies to be cow dairy intolerant. It causes them to spit up and have reflux. When I was dairy free nursing, my babies never spit up. They only spit up when I’d consume cow dairy- and then they were colicky miserable projectile puking babies. So maybe other channels have similar reason for not eating dairy. It’s not just an allergy- it causes inflammation and pain for many. My family eats dairy and gluten now. 🌻🌻🌻🌻

Use dental floss too cut the cheese wax free dental floss works good a tip from my grandmother tried and true . Just turn the block as you cut. Just cut a nice price of floss that wraps around both hands.

When Aaron and I first Married (after dating 30 days mind you) he made me from scratch spaghetti and meatballs. His mistake cause I then knew he can actually cook… and he’s impressed me many times with his skills- he makes a mean deviled egg too.

I agree!! We are in a financially difficult time so this is helping us make ends meet. This is why I stocked up- to prepare for this job loss until we get back on our feet. I have other provisions I’m not touching in these challenges. 🌻🌻🌻🌻🌻

@Imjetta7 I hear you!! I’m definitely not using up my prepper pantry stores. OPSEC is super important during these times and keeping our preps discreet is a good call. I’m trying to use up certain things like perishables, hidden foods in the freezers, and things in glass jars before we move. 🌻🌻🌻

I do the pantry challenge. I still purchase bargains and keep my pantry stocked by doing canning projects. I do not use anything, I buy in the 2 or 3 months I do a challenge. I also give myself 10 dollars a week for eggs/milk/fruit. Grandkids come and they eat slot of fresh fruit. I also get fresh milk and eggs from local farms. Which is also paid with that 10 dollars week. This year I am only doing the pantry challenge Feb/ March. It is what works for us. I meal plan to use up supplies that needs used up.

@julliefillippi8155 that’s the awesome thing about pantry challenges- they are flexible to our needs. I need to get fresh fruit but trying to use up frozen some this week. We may cave and go get bananas or something. 5 kids and fresh fruit and veg is their snack. But we are down to one cucumber, two peppers, and two old bananas as far as fresh not frozen goes. 😅

If your family likes chicken enchiladas with sour cream sauce, that might be a way to stretch chicken. Something a little different and is not spicy. The sauce can be thickened with cornstarch, but not sure what you could use in replacement of the dairy, with sour cream and cheese that goes in this dish, along with the tortillas. I am lactose intolerant so I have to eat things sometimes different from my family too. All of the specialty items get so expensive too. Since the kids can eat dairy, thought this might be one dish you could make and it freezes well too. I thought as you were making the chicken gravy, she is on her way at this point where she could have a great chicken pot pie…which you can put all together and freeze too. Stretches small amounts of leftover chicken. This along with homemade chicken and dumplings stretch little bits of chicken. I also, pick every little tiny piece of chicken off the carcass and use the super tiny pieces to make pot stickers out of it. Does not take much meat to make up plenty. I buy plant based wonton wrappers for the pot stickers fill with a mixture of the chicken that has been soaked in soy sauce and little bit of green onion mixture, that has been seasoned with a little honey and fresh garlic or garlic powder. Drain chicken well, then fill wrappers. Seal with tiny amount of water on your finger and form. Then shallow pan fry, pour off any grease/ oil and add tiny bit of water to steam. We like ours just pan fried. You can serve this with packaged ramen noodle soup doctored up: drizzle beaten egg into broth, add in veggies your kids like and you made something so different yet very inexpensive. If you make scalloped potatoes for family and have leftovers use these to make cheesy cream potato soup. Have you ever tried a potato and bacon pizza or pie? Very good. Save any tiny bits of meat, chicken, pork that isn’t enough for one person serving, freeze and label it for five meat pizza. Use this on a cauliflower crust( or your favorite crust) to make a great pizza. The other night I found: five pieces of frozen pepperoni, two slices of leftover cooked bacon, around 2tab of chicken, two tablespoons of cooked crumbled breakfast sausage, jalapeño ( pickled peppers)and some fresh sautéed mushrooms ( about a tablespoon). And I had a frozen cauliflower pizza crust. This was all used up to make the most delicious pizza! I try not to ever throw anything away. I will label and freeze it for other things. We love any type of leftover brown gravy served over oven fries. When you want twice baked potatoes try scooping out the inside of baked potatoes and making filling as usual then put it in a oven proof baking dish. Use the skins to make potato skins and freeze for snacks or for a night of appetizers for dinner you already have frozen.
