I would love to see the size of your freezer and how you pack it up. I, and many of us, just have freezer drawers at the bottom of our fridge so there is only so much we can freeze. I'd like to see your organizational skills in the freezer and also your closet for all your cleaning supplies. That would be a big favor. Thank you so much.

I think you would need something besides a regular pie crust. There will be a lot of water in this pie and the crust needs to absorb some of it. But here is a recipe for biscuits from a true U.S. “Southerner”, Paula Deen. I want to share with you two ways to use fresh basil that I experienced this week. One was at a farm to table cooking class. They had large pitchers of ice water with a large stem of fresh basil. It made a refreshing beverage. The second use was at a local flower farm. They use flowered basil stems in their flower arrangements for greenery. It was beautiful. Thank you for your lovely channel. I have a stool in my kitchen because I was disabled in a zip line accident years ago and can't stand that long. I like you spend a lot of time in my kitchen so the stool saves me a lot of pain! Some time I am chopping things to freeze or making bread or something that keeps me in there for 4 to 5 hours so the stool is a necessity! Just a thought for those time consuming jobs!

Also are you located in New York I used to live in Watertown New York I live in Pennsylvania now and I love to visit some of the places you shop at I’ve already ordered those long wooden spoon type utensils you use from Amazon I am not able to consume red meat and every recipe I’ve seen you do is veered more towards the vegetarian I can eat chicken and turkey eggs and things like that just no red meat I just simply cannot eat it nonetheless I have loved almost every recipe I’ve seen you do and I love edible Flowers in any salad and your salads all look so fresh and inviting and just just beautiful so please keep doing what you’re doing it’s very therapeutic to me

Thanks for all of the ways to store/use basil, my basil plants (and parsley) are going crazy this year! Basil salt is the first thing I'm going to try. I've never added olive oil to my basil leaves I just put them in a ziploc bag and freeze them, they've never turned black on me if frozen immediately. I also freeze parsley leaves (and some stems) in ziploc bags. Both herbs are easy to use while frozen as they crumble like potato chips, i can then measure out what I need. Thank you again!!

Sometime you could try inserting a straw into a baggie you are going to put in the freezer and sucking the air out completely before sealing up the last half inch. I’m going to try your oil covered frozen basil. Nice and easy looks like! Thanks!

I make the basil salt like you did but them put in the dehydrator until it is dry. This allows it to be shelf stable. Makes great gifts. The tomato pie is one of my favorites. I just use a deep dish pie crust. A great recpe.

Kevin, we were in Tuscany last month and my husband had pesto twice. Once it was made with oregano, and neither version had garlic (or any discernible garlic!). We much prefer our pesto made with basil and plenty of garlic! I have been freezing pesto all summer, but may need to try some of your other preserving methods. And that tomato pie looks amazing!
