Amazing catch! That fish gave a hard fight. I have a few questions if you don't mind. What is the advantages of having the hooks places on the side of the lure? And does aging the fish improve the flavor? Is this for raw preparations only?

Attaching hooks to the side of the lure increases the chances of hooking them successfully. Aging the fish makes the meat more tender and enhances its umami flavor. This is not only for raw dishes; even when cooked, the flavor improves due to the aging process. That said, aging reduces freshness, so some people prefer eating fish while it's still very fresh. It really depends on personal preference.
