I’ve made taco soup probably six times in the last two months. It’s SO easy and quick and feeds the whole family on a budget, which is perfect especially as the kiddos have a different sporting event to attend nearly every night of the week. I make it JUST like this… except I do it all in one pan for easier cleanup. This whole time, I thought it was a recipe that I just made up 😂 Must be an Okie thing ♥️ I like to chop up some fresh cilantro and jalapeños to put on top. I also added some rice once, that made it so much more filling!

I hate watching your videos. Why you may ask . Because for 1 you always make hungry. For 2 me make me want to be right there with you when you're cooking so I can enjoy your meals. I'm a senior and disabled vet. I can't do the cooking, wish I could. But being single and alone except for my service dog. I tried this and I LOVED IT! I did alter the recipe as follows- 1lb of beef instead of 2; 1/2 an onion; 2 rather than 3 cans of Rotel; Half as much beef stock and cream cheese; I omitted the green chillis (since I had extra Rotel) I wish I had this recipe back at the old job before I retired, couple times a year, we’d have a chilli making contest. This is a keeper!

Love making this. I too am not a black bean fan but will use red beans or pintos. I prefer plain tortilla chips vs the ones you used I keep a sliced lime around to squeeze on top right as I eat. Definitely on the list for next week after we are done with turkey. You Shan and the “kids” have a Happy Thanksgiving. I had to watch thrice to see that ladle you used. Liked its size! And so handy to taste with lol

I'm in agreement on the black beans. I think they look better and taste better in the soup than pintos, and I love pintos. I also put in kidney beans. Instead of the cream cheese, I go with sour cream as a topping. But the ingredients you got in there you can't go wrong either. Looks really good!

This is a great time of year for warming soups, especially in Vermont. I've _got_ to make your taco soup. Two other soups I love for the winter: menudo, which I can buy at the supermarket, and Philadelphia pepper pot, which I make from an old recipe. The chilies in the soups fight cold germs and sure warm you up from the inside.
