You have to put the images directly into the files. You should be able to get to them by going into steam, and browsing local files on Ultrakill. The cybergrind textures file is specifically what you're looking for. Hope I could help, my fellow Glaceon enjoyer.

the reason why guttertank one-shots the gutterman, it's because they were created to counter gutterman. Hakita purposely coded guttertanks to insta-kill guttermen for lore accuracy.

I dont recommend using aim assist because it makes aiming at other enemies and coins harder, also dont forget the whiplash. Also Also i very strongly recommend swapping the blue nailgun for a sawgun.
