I cooked for 50 years all over the USA very common practice in places that sell a lot of burgers. It's half cooked, then kept in hot beef broth, then heated to full cook to order.

Worked in a restaurant like that, its more of a formality thing to keep track of "spent ingredients", pretty sure he bought it for much cheaper, and even has a work discount on it Some areas/workplaces are extremely strict when it comes to this, to prevent blatant stealing and wasting primarily

If anyone's wondering, they're being stored in a bain-marie which basically is a hot water bath (though most foods usually aren't submerged in water, instead they're in a metal gastro that's sat in water) and it basically just keeps food hot. It is entirely food-safe as long as the temp is correct (my kitchen hot holds at 63 but it varies by country), though I've never seen anything other than sauces and cooked veg stored in them.

As a sous chef I have gone the entire day without food until the last hour til is open and I might make myself a burger just so I won’t go home on an empty stomach. It’s crazy how you are surrounded by food yet go without eating the entire time outside of taste testing

I don't typically get to take breaks during winter or summer, I get like 20-40 events depending on the season. I would like to take breaks, but the people on the line get breaks in the middle of my shift and towards the end, my coworker takes his break, so I have nobody to cover me.

I was a chef before corona... and while I think its insane to precock a burger... I will not judge without knowing the Real rush there or the price. Some other burger like meals are precooked, like "Frikadellen",Ćevapčići or Meatloafs... so yeah. Not the best first Look but cant say any thing else bad or good about that.
