I had a version of this in Mexico a couple years ago and they also added a touch of chili to give it a kick and the clay mug was rimmed with a salty chili powder. I loved it!

Awesome cocktail recipe! Just a side note: The porosity of the clay cup is known to absorb any liquid placed inside. It is customary to soak these clay cups for several hours/overnight prior to using them, thereby sealing those pores to prevent this from happening. Cheers!

@@NicholasFiennes as I had both the cordial and the ingredients for this cocktail I can tell you that the cordial isn't really a substitute for the pineapple juice, especially if you're using a very smokey mescal. The cordial is just to soft and loses all the complexity it has.

@@StevetheBartender_ No, it doesnt increase acidity, but the imbalance due to the extra dilution makes the acidity stand out more since you are not using Pineapple Syrup (1:1 Simple). Edit: Not saying you're completely off-base with your suggestion of adding more brandy, but that extra alcohol content and darkness in the brandy will mellow out the pineapple juice (is that fresh strained pineapple or store bought in your carafe?) and make it a very different cocktail. I'm just having a chat, not necessarily correcting you, especially since you're going off a recipe. We always talk about different ideas at my bar when we're developing a cocktail menu! Cheers!
