disclaimer: This is not necessarily an “Everything I eat in a week” video but moreso “Most of the things I ate in approximately a week” lol
I filmed for a bit over a week because I wanted to make specific things but just didn’t have time to make them all during the 7-day week. And there are also some meals/snacks here & there that were not on-theme that I didn’t film because it’s a bit unnecessarily difficult for every single thing I eat in a week to be 100% on theme… lol so hope that makes sense!!

FYI you can just blend cashew butter (or another nut butter) with a liquid (eg: almond milk, coconut cream, water) if you’re too lazy to make it from scratch or if you don’t have a strong enough blender ;)

You had me LOL at the "vegan buzzwords" :'D Also the difference btw cacao powder and cocoa powder is that cacao is raw/untreated and cocoa is typically heat treated prior to blending into powder (e.g. roasted)

I remembered going vegan at the time these cashew raw cakes went popular. I always wanted to make them but only had a hand blender in my flat after moving out. So I made them different with some kind oft crust like you made (dates, oats, walnuts - even though it took me ages to blend!) and then only putting vanilla yoghurt on it and freeze them. They tasted really great and I made them all the time😊 Also Tofu scramble and salads where my favourites back then. Now it's sushi 🤣🤣 - so this video really brought back a lot of memories ♥️

I'm so jealous of your preparedness of kitchen/pantry/frozen items. If I ever get a vegan roommate maybe I can improve ours. All the the vegan staples just ready to go seems so nice!

hi emily! i just want to say that lately i’ve been having an extremely hard time, mentally (lots of anxiety and panic attacks) but watching your videos has really helped me calm down and bring me back to a good place mentally. i’m not there yet all the way yet but watching your videos throughout the day really takes my mind off of all the worry and anxious thoughts that my mind conjures up, so thank you so much for that!!! i love how much effort you put into your videos and i love how long they are, also i love your sense of style, every video i find myself thinking “i love that shirt/sweater”. i really appreciate how enthusiastic you are about trying out new recipes and sharing the things that worked/didn’t work when creating something new. i enjoy the fact that it seems like you care a lot about the quality of your content that you never half-ass anything. these things are what have drawn me to your videos when i’m feeling bad. you just have great vibes!!! thanks so much for all your work and your super positive attitude. keep doing what you’re doing :)

There's this place I used to live near that makes a blended coffee drink with frozen greek yogurt, almond butter, coffee and almond milk. I have have tried making it at home with frozen plant yogurt, it's seriously amazing.

rec for cacao nibs if u have some but have no idea wtf to do w/ em: so, this works best if you do have a loose tea strainer, but i'm sure there would be other ways to do it; anyway, MAKE TEA. steep the cacao nibs in hot water (it's an "herbal" technically, so boiling is fine, or boiled and slightly cooled) for like.... 10-20 min or so, and it should make a brew that's "thick"/rich in chocolatey color, strain it out/(remove your tea ball, strainer, etc.)and then treat it like coffee! add as much of yr preferred sweetener and some nondairy milk and you'll have a somewhat caffeinated (not as intense as coffee, but could be a pick me up still!) "cacao tea" that basically tastes like a cross between a roasty toasty coffee and a hot chocolate made of dark chocolate. i know there's absolutely OG cultural recipes using cacao that folks should *definitely* check out, though, if they rly want to learn how to use it.

This is so cozy and nostalgic. When I first went vegan I ate a lot of Boca burgers and Chipotle veggie bowls and good old "Bean Curd Homestyle" from the Chinese restaurant. 🤤

it's harder to find coconut cream around here, so I make a cream from peanuts, like making a really concentrated milk from raw peanuts :D I also make a lot of peanut milk, as it's a lot cheaper than cashews

this one sushi restaurant i’ve been to that has a rly good vegan menu has a roll that comes with seaweed on top of each piece of the roll & it looks so pretty so i started combining them myself at less vegan-friendly restaurants lol

Cacao is the raw, practically untreated, powdered cacao beans while cocoa is the cacao that's been heat treated, often with added sugar. That aside the coffee float looks insane! 😋

Pinch and dash are standardized units of measure in cooking. You can actually find measuring spoons for them on Amazon along with tad and smidgen.

A delish smoothie I make constantly is 1 frozen banana 3-5 coffee ice cubes (the "regular" shape ice cube, add more for the baby cube size) 1 cup oat milk 1 tbsp milled flax seed or hemp seeds 2 tbsp smooth peanut butter 1-2 oz maple syrup 1 tbsp cacao powder ITS SO LOVELY

22:43 Careful of Inari, it sometimes contains Dashi. Actually also the seaweed salad could have Dashi too. Learned that the hard way going to Japan. They put Dashi in EVERYTHING!

There is a vegan restaurant in Charlotte, NC that everyone hyped up. They use cashews in almost everything. I was so disappointed because I have a tree nut allergy.

Cacao used the whole bean not at high temperatures. While cocoa powder is roasted with most of the fat removed. If you tried to make chocolate using only this deffated stuff it wouldn't work and it would be very dry from the lack of fat. 100% darling chocolate is made by processing the whole beans like a nut butter basically. The type of fat just dries more solid

Theres a local brunch place near me and they make it easy to veganize everything:') vegan pancakes, tofu scramble, vegan French toast, breakfast burritos, sandwiches, etc. Its truly lovely. But i think a stereotypical vegan brunch HAS to include avocado toast!
