Excellent video and recipes. Spring hasn't arrived in Scotland yet because we're still getting low temperatures of less than 10°C and at least we haven't been getting as much rain compared to January & February. Hopefully the weather will improve as we get nearer to the end of the month and go into April and we get higher temperatures.

Yum... gonna be trying these lunches out ....I’ve only just tried tofu...as I could never cook it right....so defo gonna try the tofu salad 🥗 thanks for the ideas 🤩

I hope you enjoy when you do :) tofu can be tricky in the beginning. most people like the firmer varieties and don't know that it comes in various consistencies. different types of tofu are good for different things. in the video I use firm marinated tofu :) x

nice! most online recipes i find for tempeh tell you to cook or steam in water/veg broth in order for it to lose its bitter taste. do you feel bitterness in the tempeh the way you did it? thanks for another video

:) glad you like it cesar! I have never cooked or steamed my tempeh. usually it only gets bitter or very strong flavoured when a bit overly ripe. if you find it helps achieve the flavour you want I think it's a good thing to do but not necessary if you like it as is :) x

If you can, try finding avocados native to California or Florida. I know it's not super close to you so it mat be a tad expensive, but for those avocados there is no rainforest destruction.

With all due respect I wanna ask you something. I love your channel love watching every video and it is so pleasing to watch your videos. I come from India and we eat a lot of spicy food and we cook a lot of different kind of foods. we have various methods of cooking and processing and a lot of things and spices sorry just wanted to know that when you cook beans are when is boiled beans to the actually taste good and appetizing because I don't know if we were to make beans we would put 10000 spices in that and cook it for probably 1 hour haha. A lot of the food that you cook is usually not cooked for a longer time and not with a the lot of spices which I know is a good thing but I just want to know if they actually taste good I mean you must have had different kinds of food what do you think about these do you think that these food taste really really good? P.S. I still make you fried rice recipe A LOT! ❤️❤️

I cook a lot of Indian food at home too. I think it highlights the herbs and spices for flavors. I had lemony dal and curry stuffed buns for supper. This style of cooking highlights the flavors of fresh ingredients and their combinations. It is different but really good. You rely more on the taste of each vegetable and what complements them. And you don't need a giant spice cabinet. Haha

do these sit well in the fridge for like 4-5 days? i want to make some of them weekly or are they best suited for 1-2 days?

most of them are better for 1-2 days. maybe net time I can focus on dishes that are better for longer in the fridge. I usually find if you don't dress salads they are fine for a few more days though. other than that I find soups and stews and other cooked dishes to last better for the whole week than the types of recipes I made in this video. check out my autumn edition for some more dieas. with that said the tabbouleh, hummus and roasted components in this video would definitely keep well for the whole week :) hope this was helpful!

hi there :) I am Swedish and currently living in Sweden. I have posted some Christmas dishes that are typically Swedish as well as a dish called "skagenrora" which is my vegan take on swedish seafood mayo. maybe you'd like to check those out! I'll definitely keep your wish in mind though and make some more swedish food on the channel :) often I use produce that is typical here as well like root vegetables and grains. x
