A yummy evening / Beef steak cutlet GyuKatsu don Meal Combo

Hello everyone happy new year👐
This time, I’d like to share with you Gyukatsu don😋 [ a bowl of rice topped with a deep-fried breaded beef cutlet, egg, vegetables, and condiments ］

[ Shrimp shell miso soup for 3 servings ]
Some shrimp shells
about 900 ml water
1 Tbsp cooking sake
1 tsp bonito fish dashi powder
about 2.5 Tbsp miso paste
Some daikon radish, green onions
[ Wafu onion sesame dressing ]
2 Tbsp ground sesame seeds
2 Tbsp olive oil
1 Tbsp sesame oil
2.5 Tbsp lemon juice or vinegar
2.5 Tbsp soy sauce
1.5 Tbsp sugar
Some black pepper
A pinch of salt (salt to taste)
Option / a little mayonnaise
*eat up in 4 days
[ Gyukatsu don beef cutlet for 1 serving ]
about 1.8cm thick low fat steak
Some onions
2 eggs
[ The sauce for 1 serving ]
80 ml water
1 Tbsp soy sauce
1 Tbsp mirin
1 Tbsp sake
1 tsp sugar
1 tsp dashi powder

I almost always use frozen seafood. I find the primary difference is in texture but its incredibly convenient and almost always cheaper. Just thaw in fridge overnight for individual portions. Or stick in a bowl of cold water for an hour or so. Can stock up when on sale and have tasty seafoods all the times.

Use coarse salt to wash the purple off the cutting board 😊 + it's a great technique to use to clean it every once in a while. Same for spoons and ustensils (wood)

In the Southeast United States, where I am from, we call fried beef cutlets "chicken fried steak" because we fry chicken in the same way. The most popular version is served with a white gravy, but I make a version with eggs and onions that looks similar to yours. Your meal looks delicious! Happy cooking 😊

Pro tip: Sprinkle baking soda on your cutting board, then cut a lemon in half and use the lemon to scrub the cutting board and it helps remove stains and deep cleans it 😊 Also, I’m already loving the new video angles I can’t wait for this series ❤️

Man, one of the things I miss most about Japan is how good the eggs were; super rich orange yokes, and then on rice bowls they were so creamy and silken in texture. I don’t like to have super runny eggs now in America but I loved them in Japan!
