It’s due to Shinchiro Watanabe being director. He’s well respected and can get any talent he wants because he’s a legend Same thing with other people like Miyazaki, Hideaki Anno, etc. Evangelion had many legendary animators work on it

one of, spoilers if you haven't seen it but the conceptual battle made reality as the end fight of the season was just insanely cool, and brought everything that had happened thus far feel like it came to a fitting end tying that season and story so far up in a really satisfying way. Mob psycho feels like a masterclass in writing and direction all the way through.
