I grew up eating this stuff never sliced , after removing the meat from the shell the fishermen would “tenderized “ them with a paddle prior to cooking, not done properly they could be very tough

Sorry, Chef. Go to Gansbaai and learn about perlemoen. Fifty years ago, I had a permit, harvested my own, and all my peers knew several ways of cooking Perlemoen. Ours may not have looked as design perfect, but then the taste was perfect. Boomers "know stuff." 😅
