One of the things I enjoy is getting new ideas of recipes to can. I can’t tell you how often it has provided a way to use extra produce. Even though I have multiple canning books it just strikes me differently when watching it come together for someone else! Thanks for sharing.

A steam canner is the way to go. Less water and time heating it up.

FYI: To keep the lovely green color of your green beans you add 30 mg zinc to pint jars and 60mg to quarts. Your green beans will now have that lovely green color.

I haven't researched this myself, but I've read that is not safe advice due to possiblity of zinc toxicity. Something to consider before choosing to do this yourself.

@@Andrea-si2vs 30 mg is a dose for one person each day and I’m sure they aren’t going to be eating numerous pints a day. Spread across a couple of people it’s even less. Besides, manufactures add zinc to green beans, and that’s why they are so green. I guess you better stay away from green beans totally unless fresh.Besides every other product they add vitamins to.

I too am currently canning green beans every week if not twice a week. It's also one of my most used items. 👍🏻I am going to try the bruschetta in a jar, sounds wonderful. Thanks for always inspiring me.

You do your Anaheim Peppers just like I do. I also get 20 pounds of Hatch when they are in season. (every August). I can them in 1/2 pint jars (15 jars) and that is the perfect size for us to make pork carnitas (aka green chile). I think I will try the bruschetta. I always enjoy your videos!!

Hey Abby! I have been growing roma tomatoes for sauce. I have about 8 bags in the freezer, single layered to make pasta sauce when everything dies down from the summer. Do you have a good pasta sauce that you would recommend? I plan on using my roasting pan when it's time to process them. Love your videos!

Everything looks great! I was going to make the tomato relish (bruschetta in a jar) but totally forgot. I don’t think I will anymore tomatoes get ripe, but will definitely be putting this on the “must can” list for next year. Can never have to make pints of green beans! Such an easy side dish. I have some “mystery” peppers in the garden this year that are the color of a banana pepper but are shaped and have the heat of jalapeños. They green from a package of Bell pepper seeds. I’m going to pickle them and hope they are good on pizza.

@@cherylb.9766 ball does have a tested recipe for raw packed tomatoes with no added liquid. I feel comfortable keeping the skins on

I made the bruschetta in a jar with my abundance of cherry tomatoes. It seems a little vinegary (I had a partial jar) and not as thick as I'd like. I guess I didn't pack the tomatoes tight enough.

Oh no, that is a bummer. Have you tried straining off the brine? I haven’t found this recipe to be too vinegary
