I have to admit I didn't care for this one as much as the first. I think the first benefited a LOT from having Tone Loc and Courteney Cox playing straight roles to provide a bit more of a leash on Carey, and that Ace alone is the principal source of comedy. This one you don't really have a proper straight man, and kind of everyone is a little bit silly. The opening scene is a spoof of Sylvester Stallone's Cliffhanger. I completely forgot about the Slinky scene until they showed the steps leading up to the monastery... "There's something on the wing ..." is a reference to a legendary episode of the Twilight Zone, starring a pre-Star Trek William Shatner. There's a LOT more gross-out humor in this one. "Do you have a dollar?" As in, as if he was in a strip club. A monster truck like that actually isn't particularly great off road. The center of gravity is too high, so they're prone to rolling over. The largest bats in the world is the giant golden-crowned flying fox, which has a wingspan of about five feet. They're fruit-eaters, and are actually kind of cute.

IMO that's WHY the first movie is better. I've always found Carey's comedy works better when he has a good straight man to work against, IE Tone Loc and Courteney Cox. Everyone in this one is a bit too silly to provide a good straight man.
