I am making this for dinner. I tasted the masala before adding rice it was super hot - green chilies, pickle and red chilly powder. Hope it comes out fine :) Thanks for sharing the recipe.

They're very hard to substitute. You can probably go on without onion or something similar to it, but garlic... it is a very unique ingredient and I believe it cannot be replaced with anything.

I have a mango achar and was wondering what to do with it, we usually use it as a side dish with the the rice,we also use it as an ingredient when we make rice with dal. I'm from Kuwait and our dishes are so similar to the indian ones.

Chef, you have added rice and water ratio to be 1:2 you have already soaked the rice and there is already some moisture in yogurt, my dish is getting quite slimy, what proportion should I add water ?

It all depends on how old your rice is. The newer the rice, the lesser water it needs. You can reduce your water quantity if it's turning slimy. Otherwise squeeze half a lime (or just few drops) on rice water, just before closing the lid. That also keeps the rice separate.

South Asian grocery stores- Indian Pakistani Bangldeshi Sri Lankan..turmeric is also widely used in Iranian cooking-can try there too! Hing is asafoetida and haldi is of course turmeric!

Maria - it could be a religious thing. Some religions dont prescribe to onions, garlic etc. So I would ho easy on them ;-)

Garlic and Hing are viruddh ahar. Kindly dont add hing when using garlic., how less it might be.
