Hi friends! I'm Jennifer, a fifty-something wife and mother of 7 children ages 10 - 26. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

I never heard of this kind of “potato pancakes”. I grew up in Southeastern PA in German heritage country- Lancaster County. Potato pancakes were made with leftover mashed potatoes. Yum.

Try using same amount of chicken , 1 large jar of salsa from Aldi and 1 block of cream cheese and pkg of taco seasoning or 2 tablespoons of Sissy's Secret Spices taco or texmex. Makes a enchilada chicken serve with tortillas

I wanted you to know I made your crockpot chicken pasta dinner tonight. I didn’t have time to use the crockpot so I cooked the chicken all the way and added broccoli, pasta and cheese on top using your sauce recipe and put it in the oven covered for 35 mins, added the cheese and broiled for 4 mins. It was delicious 😋 Thanks for sharing.

I'm Polish so I appreciated the Polka music!! And I call potato pancakes, potato placki. My father is all Polish but my Mother was of Russian- Jewish decent and she called them potato latkes. I live in Ohio and went out to eat with some friends years ago and one friend ordered a side of potato pancakes. I was shocked when I saw fried mashed potatoes!! I had never seen that before. Lol. I was thinking to myself....those are NOT potato pancakes! I don't remember our conversations that day or anything else. I couldn't get past staring at those "pancakes." 😂

Ihave done a surprise ball and put something special in the middle but we use plastic wrap and go around putting in candy etc..make the large ball…then using a pot holder glove each person gets the change and timed to unwrap the ball the person that can get the ball unwrapped within the 30 second time frame keeps the surprise in the middle I have often put a money gift card in the middle.

Thanks for sharing part of your lives with others throughout our world via You Tube and Social Media. You are a beautiful family and very inspiring and entertaining! Thank you! I found You Tube and your wonderful channel a few years ago. It is like chatting with a great, precious friend. Thank you! What you share has helped me over come my anxiety. I love watching your channel when I might be feeling a little overwhelmed from having anxiety about different things, needing some mama time, doing household chores, cooking for our precious family of four and needing recipe and meal inspiration and or just wanting to relax a little. I look forward to seeing what God has for your channel in 2024. Much love, prayers and God Bless for CHRISTmas and the New Year from our family to yours from Australia. xxx

I roasted my turkey overnight using the slow temp method. I started my turkey the night before at 300 degrees for one hour then turned my roaster down to 200 degrees and left it overnight. When I woke up at 7 am, it did not smell the turkey and I panicked . But when I checked it, it was completely cooked. It was very easy and perfectly cooked. Love the Polka music! We also for at least an hour before Mass. When I was a girl, we had to fast for 3 hours …when my Mom was young, they tasted from midnight… so 1 hour is not much!

I cook my turkey the same way, but in my oven in a blue roaster pan with a lid. Falls off the bones tender. I take all the meat off the bones right away as it is so easy when the meat is still warm. Bones for bone broth too.

I find that cooking rice using the rice button cooks it too much. I like rinsing the rice and then hit the pressure cook button for only 3 minutes and then doing a natural release for 10 min then fluff with a fork. I used 1 cup rice to 1 cup water ratio. Have a blessed week

The turkey and gravy looks yummy to me! When you do rice in the instant pot, you should use a 1 to 1 ratio of rice to water. It will give you nice firm rice that is cooked thru similar to the texture you get at a Chinese restaurant. Also, IDK how long the rice button cooks for, but I use 6 minutes and a natural release. Hope you all are having a nice Advent.

When using the instant pot the water to rice ratio is equal. Equal parts water and rice, then it won’t be so sticky.

I've noticed that rice becomes sticky when you rinse it before cooking. Perhaps I it's the variety, some rice is meant to be more sticky like sushi rice. I use long grain or jasmine and don't have an issue usually.
