When you suggested steaming cranberry juice I was like YESSSSS!!!! Imagine a winter juicing project after all the cranberries go on sale after the holidays!

I buy a ton of cranberries after the holidays and dry a lot of them to toss in things like chocolate chip cookies and no bake chocolate oatmeal cookies and it's amazing.

My mother and I did this in 2020. I have a daughter who has JRA and kidney issues, unsweetened cranberry juice is her favorite. We also did concord grapes and apples. I am going to try rhubarb.

My mother had lots of kidney issues due to a prolapsed bladder. Her Urologist told her that 4oz of cranberry juice daily would prevent bladder infections.

I have kept a "canning journal" for years. I write down what I've canned and frozen, how many pints or quarts and of course the date. It is so much fun to go back and look at all of the things I have canned over the years.

Collecting herbs one should mind the stage of growth of the plant for the best results (flavor & helth benefits). Becky, you collected strawberry leaves while the plants were in bloom, that might cause the lack of the desirable flavor. While blooming, the plant sends the energy to the flowers and there's where it concentrates most of the flavor and microelements. The best time to harvest leaves for a tea is when they are very young (as you did with the raspberries 😊). Greetings!

Just FYI, green tea is only steeped for 1min in water at 175 degrees Fahrenheit. That's why most people say green tea is bitter. Learning about the brew process for different types of tea can really help to enhance the your tea experiences. 😊

My suggestion for the juicer is to drain it into a gallon pitcher which is sitting on a cart or stool. Then fill your jars with the pitcher/funnel.

You could freeze dry the rhubarb pulp and either just use it for a snack/sweet, or alternatively use it reconstituted for Josh's oatmeal or a cake or dessert....❤ yummo

I did a bunch of canning in the last couple of days too! I did 14 quarts of chicken broth, and then I bought a flat of strawberries at Bi-Zi farms and made 9 pints of strawberry jam and prepped 4 large trays of sliced strawberries to be freeze dried. Now I'm eyeing our coat closet and thinking about adding shelves and converting it to a canning closet/pantry. :)

I did the same thing. Becky got me canning again after approximately 30 years I started from scratch. Rose homestead suggested the closets and under beds. Bought can goods or canning works great.

I have done grape juice for absolute years. The way we do it is we put a bar stool in front of the stove, place a pot with no handle on it n put the sterilized jar inside it with the hose sitting inside the jar ready to use. When the juice is ready you have both hands available - less chance of getting burnt! Hope this helps!

Suggestion: I have a rolling workstation that is small that I use next to the stove. Works for canning too.

I, too, am cleaning out my freezer. Pulled out all my accumulated chicken carcasses, made broth and pressure-canned 10 quarts yesterday. Pulled out my 4 remaining canned quarts of grape juice from last September’s grape harvest because I am out of grape jelly!

The key to drying chives, I’ve found, is using lowest temp in dehydrator. I have some I dried last year that are still green, not brown.

As someone who enjoys freeze drying things, I know the importance of packaging it up while there is the least amount of moisture in the air and getting it done as quickly as possible. I was inwardly cringing, seeing you get all that stuff steaming on the stove and just letting everything sit out, soaking up the moisture in the air before you packed it up. I truly hope you have no issues with things going bad but I would highly recommend prioritizing packing up your freeze dried foods. This video makes me wish I had more rhubarb plants 😀

I write notes in my recipe books too. If I am not sure about the substitutions, I first write them on a post-it. Then I can alter them until I get them right and then write them in the book. My Better Homes and Garden book has a bunch of my notes in it.

Someday I'll have a freeze drier. Until then, herbs go onto a mesh screen I built out of metal window screen and 8 of those cheap wooden yard sticks in the Home Depot painting section. I just leave it in the garage until everything is crispy.

Hi Becky! Instead of all the putting jars in a pot, holding pot, filling up, dripping from the hose and putting sugar in each jar we extract straight into a large pot and stear in sugar to the juice. After that we use a ladle and a funnel to fill up the jars. Another tip, I always have my jars on a trey or something so that if I spill it doesn´t end up all over my counter and get sticky all over. About the rhubarb pulp. My mother used to take that with about the same amount of fresh strawberrys and make a jam, not the kind you have on toast but a version with just sugar and perhaps some vanilla. We had it on our pancakes, in plain yoghurt and things like that (in Sweden we don´t use honey, maple sirup or things like that on pancakes) . You can do the same with strawberries that you juiced, take equal amount of fresh berries (strawberries, raspberries, blueberries) and make jam.

I don't have room for a steam juicer. But last year, we were in Goodwill here in Georgia and found one, brand new, for $79 or there about. Now that I want one, there isn't a cheap one.

😂❤I do typically soak in the jar 12 to 24 hours as it really increases the digestibility of the proteins I need from them. I just dump the water out each jar then put salt... maybe garlic. I think they even taste better. I'm dirtying any extra dishes either. There are other benefits too

When you tubers do canning videos, I wish they would state up front if they are following USDA guidelines or deviating. I think this would be helpful, especially for new canners.

Looks like herbs hold their shape a lot better using a freeze dryer than a dehydrator!

I dehydrated chives in my oven just yesterday. They taste great and stayed green. Maybe a different variety? I turned the oven on 170 till it heated, then shut it off and left the chives in there all day while I was gone. Then turned it back on 170 for 20 minutes, shut off and left all night.

love that you try to minimize food waste and try out creative ways to use what is left. we had roasted duck, my husband told me he'll go out to throw away the carcasses, i yelled "nooo! just freeze it, i'll make delicious soup out of it in the winter" hubby was confused, asking "are we doing that now? are you sure you can?" me all hyped "yes, becky does it all the time" 😝😎 greetings from germany

Growing rhubarb for the first time this year. My crowns are still small but doing good. I've got 7 quarts of green beans in the canner right now and should be able to pick okra soon! Like in a day or two. Having fried squash and green mators for dinner tonight. I love summer because of the food! I've got mator's blushing! My fav!

Just now got to finish the video! I decided to harvest and can some swiss chard and beet greens! Just took the rings off of 16 pints and still have plenty of chard to go! Prolly gonna freeze the rest. Canning greens is a chore and a half! Whew.

I have a steam canner which I bought thinking I would get lots of elderberries. Did not happen as elderberry plants did not like my location or soil. If I buy a bag of apples and add rhubarb, with the steamer make a drink soln. Thanks for this idea! I also add grated ginger. I am overflowing with 4 mature rhubarb plants!

should have been able to do 2 layers of pints in canner. If did not have 2 racks to use, you could fold towel and place under first layer; then use rack between first and second layer so water bath all at one time

My rhubarb plant only gives me one good harvest in June & a smaller one later in the summer. This year I plan to divide it, giving me several plants so I can get enough rhubarb for all these great recipes.

I've got a canning journal - but I'm really really bad at keeping it up! What I do more regularly is use those post it colored flags in my Ball & other canning books. They are small and removable and don't damage the page and I've got 3 colors to code stuff. I don't have to dog ear the page and its easy to find recipes I use in various books cuz I just check the flagged pages and if its not there, then grab the other books! Just an idea for you. I'm putting in a rubarb plant next year so am excited to try some of these rubarb recipes!

I just heard you mention a stool for your juicer as I was typing this. I put a large measuring cup on a tv tray and just let it fill the measuring cup and I don’t hold it. Rhubarb jelly is very good too!

Becky, when I traveled to Europe this June- I came across a market where this man made his own Rhubarb Ketchup. It is kind of sweet/tangy/savory all in one. Just found it interesting. Love your channel! 😊

I love your idea about saving the pulp after juicing. I usually just give it to the chickens. One thing that I have found is that Rhu juice is a great substitute for lemon juice in recipes, so I usually leave it unsweetened so that I can sub it as needed.

Excellent advice. I think if you know how you want to use it, it helps when making those decisions. I think I would prefer unsweetened. You can always sweeten it later.

Someone else who at this stage of the season. You speak my language 🙏🏻❤️ I’ve used up about two thirds of my dry goods, most of what was left from last summer in the freezer, the marmalade and jam from 2021 and it is already time to start picking berries daily, rhubarb and leeks daily. I love this time of year. Going outside to decide what you want to eat that day, seeing everything thrive. It’s a luxury for sure.

Rhubarb juice simmered with a cinnamon stick, add sugar to taste. Serve over ice diluted with club sofa or 7 up..

Hey Becky, you should crush your basil and your tea leaves down because you’re gonna put them in a teabag or a t-ball . That way you’ll have more space to add more and keep adding to it for the season.

Hi Becky, I would think with your steam juicer you could just do a 180 turn on the stove and then place your cans on the counter to the left of it and put the juice in that way

I remember it used to grow in back of my school. So, I would sit up against the building eating it. As, my mother wondered where in the heck is my daughter. Among eating other edible plants and flowers. Dandelions and the purple flowers sucking out sugar nectar.

Voiceover “I’m going to can beans”…….. then 2 seconds later….. “I’m going to can beans”…… a lot of the voiceovers are filling in the gaps that your not talking and it’s ok to have music playing or something…. Or honestly nothing(people like the ASMR of kitchen noises)…… Less work on your end and no repeats of what you’re doing being said over and over 😊 coming from a place of love I hope you feel like it is 💕💕💕

Thank you for listing the steam juicer below. I was reading the information on the juicer and it mentioned without the canning kit . I wonder if Amazon has one with the canning kit 🤔, Also I wouldn’t be able to hold the pot with the hot liquid so the idea of putting a stool in front of the stove is wonderful. Again you are an amazing teacher ❤

Becky try your raspberry leaf tea fresh out of the garden, is a whole other taste sensation. Yes dried is great for the winter months but may as well make the most of the fresh while you can 😊 same with camomile tea or peppermint tea. My favourite is camomile with a couple of mint leaves so delicious

I'm not sure that would work because the jars have to be below the level where the hose comes out of the juicer.

rhubarb is the first local fruit each year (2 hrs west of Toronto) get it in freezer ahead of strawberry season - good thing cause berries EARLY this year 2024 - creature of habit - strawberry rhubarb (in blender for sauce) has been one of my favourites for years - while juicing isn’t an option may just need to try bbq sauce - many thnx 🇨🇦🙏

I ran out and watered my very very dry rhubarb plants and plan to harvest some when they perk up. Going to try that BBQ sauce recipe. I got the book. Also want to try the beans canning. I grow scarlet runners and they need to be dealt with from last year. They’re like beautiful butter beans.

You made the right call not trying to can that puree. In general, you can't can puree because it's too thick for the middle to be guaranteed to reach a safe temperature.

Hey Becky! You are so organized!! I love how your kitchen was all set up.Also how you added the notes right in your Ball canning book. i am going to steal that idea! I have some rhubarb in my freezer, and def. going to make that BBQ sauce! YUM!!

Love my steam juicer for crabapple jelly. Blackberry seedless jelly, both are excellent for people for whom seeds in their digestive system are not allowed

Becky i made the rhubarb bbq sauce as u did with chipotle powder. I added more brown sugar but in the end after blending it i don't think it would have needed it. I got 9 half pints of no added salt bbq sauce. We are 1500 mg sodium a day and this was a nice way to use aomw rhubarb. Thanks so much. I made the recipe notes in my canning book the way u made it to make again.. ❤

I just made for the first time "Sunshine Rhubarb Juice Concentrate". It is AWESOME! Will have to make more when the rhubarb gets big again! Then I pureed the pulp and mixed in a jar of strawberry jam and dehydrated it for fruit leather.

My husband loves my home canned grape juice. I made an apple blackberry juice last year that was amazing. I love my steam juicer.

Rhubarb oatmeal sounds so tasty. You can put anything in oatmeal to make it sweet/savory. Miss seeing the garden. Enjoy your parents being with you all and the baby.🎉

If you follow Rose Red Homestead they converted a large stock pot into a steam canner. Ive done the same and its a a game changer! It heats so much faster, you use so much less water and its much safer! I've had no failed lids since changing!
