Dude. You are the real deal. You're one of those increasingly rare home cooks with the skill to prepare a banquet on two days notice. My mom was like that in her prime. Multiple dishes all made from scratch in 30 hours, and everything was delicious and ready right on time. I get tired making one lasagna. Respect to you both.

This could have easily been 2 hours longer and I would have watched every minute. I absolutely love the rich, almost decadent way you cook, Every recipe looks like you feel your family is special and want them to enjoy your food. There are a number of creators on youtube teaching how to cook once and eat all month, and I wouldn't feed that food to my dog. Just mountains of cans poured into tinfoil buckets. All of your recipes look like company is coming, and I want more. You are a desperately needed breath of fresh air. Take your time, we'll be here for every minute taking notes.

I could not agree more. Dumping factory-canned food and boxed, processed food into a bowl will not give that home-prepared quality. I like watching all sorts of cooks but Becky has a unique approach.

So...I would agree with you on how I appreciate what she cooks and how she cooks, but I will disagree with the disparaging comments towards other cooks. A lot of factors go into being able to cook this way. Space, time, money, land, storage space, utensils, etc. Some people don't have the means to cook fresh food like this and make do with what they got. I know some people that don't have a working kitchen and cook at their parents every couple weeks to take home and put in their freezer. They don't have land or a garden, nor do they have much money ergo the need to home cook. They watch the videos from people like Frugalfitmom etc to be able to feed themselves and their families. You can show appreciate for one without disparaging the other. To appreciate the freshness of the goods vs insult someone else for store canned foods. Just wanted to point that out.

I'm there too. Rushed cooking or cooking for picky eaters/food that you don't enjoy because it's made so often are my joy killers for cooking. Special diet cooking for one member of the family is also a joy stealer for me. I'm really hoping that making some of these freezer meals will help bring back some of the joy of cooking! Thank you Becky for reminding me that cooking shouldn't be a drudgery and to be more creative about ways to increase the joy!

I'm single/live alone, and I absolutely love freezer meals! For anyone worried about how much food is made/trying to eat it all skip the normal baking dishes and get the freezer/oven safe glass dishes made for leftovers/lunches. I make a standard or double recipe, say for enchiladas, and instead of getting a full 9x12 pan I have to eat for a week I get 4 dishes of 3 enchiladas for the freezer, and 1 of 4 to eat fresh.

Thanks for the great idea! I was trying to figure out how to divide up the big freezer meals that everybody makes for just two people and that’s a great option. My daughter and I eat out way too often and if we just prepped meals that were in the freezer we wouldn’t do that so much. We both like to cook, in fact my daughter teaches at a culinary school but like Becky said, at the end of the day sometimes you just don’t want to do it! My uncle is a very picky eater and my aunt wants to try new recipes so I told her to put things like lasagna or enchiladas in loaf pans. That way it’s a great size for one dinner serving and a lunch serving. I’ll tell her to try the individual serving and lunch containers

I just love these videos!!! May I offer a tip? I bought 3 sets of inexpensive small spoons at Walmart. At my store, they were a set of 4 for $1.25. I keep them in a mason jar next to the stove for tasting. That way, I don’t run out of my regular spoons like I used to when cooking! Gotta do those taste tests!

I just started down the meal prep rabbit hole a few days ago I found a few other channels that I liked a am going to follow but after finding this video I think your style of cooking is more like what I would enjoy like the cleaning before and during I hated cooking in my kitchen it was cluttered and it's pretty dark in there because there's now windows (suck I know lol) but I added a few lights I got from dollar tree and have been organizing the last few days for today which was my first prep day its been slow starting (mostly because I messed up the beans and was about to lose motivation) but as I kept with it I enjoyed it and having food done not just for the day but the whole week possibly month is an amazing feeling...I had been in a bad depression and my house was and is still in some parts a mess but I've been doing everything to get out of it and I am for the most part my physical illness is still there but my mental one is leaving thankfully lol... any way but this video and ones like them have definitely help by making my life way easier...I honestly didn't know it could be this easy and I never thought I would enjoy life or cooking again but here I am one day at a time... Sorry for that long story it's all fresh for me so I feel like sharing and shouting from the roof tops that I'm not depressed...I hope this help and inspired someone like this video has for me😁

Great video. I am a mother of 4 boys who I raised alone, so also had to work. I also put a full day aside for cooking freezer meals and filled the upright freezer. Often getting home from work too exhausted to cook, so the frozen meals were a blessing. Also, because we lived near the beach, I could spend the extra time to take the boys to the beach after work. A great way to cook. 👍👍❤️

A tip that I got from my Grandma is with ziploc bags (or any other brand), use a jar or a glass, put the bag inside of it , turn the bag over the opening so the bag won't flop over on you. I hope that made sense! Thank you for being real. I just subscribed! Have a great weekend! 😊

I keep seeing meal preps that involve way too many small containers and work to make just 2-3 servings. The stuffed peppers and lasagna ideas look great and I'll be trying them. I don’t do stuff peppers anymore…instead, we make an unstuffed pepper casserole using large chunks of peppers mixed into the rice and meat mixture. Easy and still very delicious 🤤

@@melaniegraf6948 I have a small freezer (and a small Tokyo-sized kitchen 😅) I use 20x30cm sheet trays/pans for partially cooked meals and raw meatballs. They hold about 36 medium sized meatballs. For marinated meats I use Large size freezer bags (Japan size- 27x28cm) and just flatten my marinated meats in them. I also have 1L size reusable silicone bags that are great for precooked soups and sauces.

I lived in a small Tokyo apartment in 2000. I had to put a bath towel on the floor when washing a lot of dishes because NO counter. The bathroom was super small and the sink was part of the top of the toilet. There was one burner and small sink in the kitchen so I brushed my teeth in the kitchen sink. Lol. I miss Tokyo. Enjoy. 🤗

I love watching your videos. I could watch 2 or 3 hours of you gardening and cooking. Watching you do your thing & be so busy reminds me of how my mind works lol People wonder, "HOW?!" I'm like, 'Ask the hamster. He controls the buttons up there." Lol My mom got me used to prepping food b/c we usually wanted to eat something different almost every night without ALWAYS having to be in the kitchen. I've never prepped as big as you do, but I wanna try it! I enjoy cooking as well, just not every single day unless I'm in the mood for it.

I also do "casserole" type freezer meals in ziplocs! We are in an apartment (very little freezer space) but to save room I put the base of the meal in the ziploc. For example the chicken pot pie filling in a ziploc and assemble the day of! I have done this with TONS of meals and it works really great. Even the beautiful sausage pumpkin pasta from Becky! A new family fave.

Just a tip for the cream of mushroom…..you said it was missing a little something. Next time add a few dashes or Worcestershire sauce. It gives another depth of flavor and enhances the mushroom flavor as well!

I just made freezer pizzas this morning. I love adding oregano and onion powder to the crust mix. I made pepperoni and jalapeño pizzas for our car repair guys who are the best when you have a crappy car and I made pizza hot pockets for us to save for a quick after church lunch. I always put the whole thing together and freeze the pizzas completely finished other than baking. It's SOOOOOO good to make them homemade!

Tip:To avoid using every clean spoon in your kitchen for tasting, use 2 different sized spoons (so you remember which size spoon you’re putting in your mouth,) a smaller one for dipping, a larger one for tasting. Dip with smaller spoon and transfer to your tasting spoon. Rinse the dipping spoon after each dish. This way you can feel free to taste several times during the cooking process. It’s quicker than rummaging for a clean spoon every time and you’re only sacrificing 2 spoons.

I've just had this on whilst cleaning up the kitchen and putting shopping away. I love watching you cook & have actually learned so much from you already. I never knew until watching you how easy it was to make a cream of mushroom, cream of chicken and therefore pretty much any gravy/sauce etc... I've started making my own for all this things and I'm so pleased with them. Also the Moroccan patties from another video... best thing ever!!! The really good news is that because I was cleaning up I missed quite a lot of of detail in this vid so I shall get to enjoy it all over again at some point tonight while up breastfeeding 😁

I am a country girl :) I love turnips and cornbread and just anything veggie . I always love to make homemade buttermilk biscuits yummy . Becky try honey, siriacha, lime salmon with cilantro. Cook on high heat and crust the edges. So good!! I'm finicky with seafood too. I only eat fish if I make it.

Amazing video as always! Little trick i use (to not use all my spoons) i have a pot on the side with hot/boiled water in and a couple of spoons, ill refresh it with some hot water when washing hands etc so it stays fresh... Not so many need washing at the end of the day and thats important cause i dont have a dishwasher 😁

Or you just use the wooden 'stirring' spoon to drop some food on your 'tasting spoon' and you don't have to replace it all the time. I just make sure my wooden spoon doesn't touch my 'tasting' spoon 😀

Your mum asked about peeling eggs in another video.... we go through A LOT and the best way I've found over the years is as soon as they are cooked plunge into cold water then crack and peel UNDER the water. The shell comes off a lot easier, often in just a few seconds. Good luck 😊

I agree with you, it takes the joy out of cooking to have to cook every night. I cook 99.9 % of my meals at home for my husband and I. I am disabled but also garden and make quilts. I have 2 metal rods in my back and my 4 lower vertebrae are fused. I usually cook a meal that is 3 or 4 times more than we can eat. Cook it and then freeze the other 3 portions. Works so well.

Great Meals Becky! Now I have used both reg and no boil Lasagna noodles the trick if you use regular noodles, make sure it is completely covered in sauce and it will "cook" the noodles right through - Happy Prepping!

I love this concept, especially now that it's back to the 2 of us here, and I don't always want to cook either. I do more of the double meals and freeze the 2nd, which, for the 2 of us, is often 3 or 4 meals, and I do use the smaller size aluminum pans to freeze things in, to make clean up easy too. I also just harvested my first round of peaches from my tree, and I immediately made 4 peach cobblers in the smaller, 5x8 size pans, so we can have an amazing dessert on several occasions too. These peaches are clingstone and I didn't even have to peel the fruit for this recipe, so it was a win-win, all the way around! Love having things made ahead of time!

We have both a chest and upright. (I prefer the upright, but a chest will last longer in a power outage). I use the chest for long term stock up storage, mostly meat. And then transfer a month or so at a time to the upright. I keep my "quick foods" like bacon, ground meat, burger patties etc in the small freezer on top of my fridge. I also keep a list on the side of my fridge of what's in the chest freezer (it's in the garage and the upright is in my kitchen). Before we do our monthly shopping (Costco, Walmart, and major grocery stores are 2hrs away), we double check the chest freezer list so we know what to look for sales on. And once a year we let the chest freezer run down until we can get everything in the upright and give the chest a good cleaning to prevent ice buildup and make sure the meat is getting rotated. If we don't feel comfortable letting it get down that far, (supply chain issues like now), we pack it all into large coolers and clean it as quickly as we can so we don't loose our meat. Then pay attention as we put the meat back in to make sure the oldest is on the top and gets used.

@@melaniejay3457 I do hate the chest freezer. I am short, 5'3", and reaching the bottom is a pain. To keep it organized, I cut the top flaps off medium moving boxes, the kind w handles, made sure the bottoms were taped tight, and lined the bottom with them. Each box holds a different kind of meat. Then there is another row of boxes on top of those. So to get to the bottom row of meat, I simply lift a box. Otherwise I was fighting always sliding packages, frozen fingers and never being able to find what I wanted. Even though I hate them, I intentionally bought a chest as our second freezer. We live 18miles up a mountain and power outages happen a few times a year. And can last a couple days. The longest was 6days. We do have a generator, but it can only run for 14hrs before it needs a break or it gets cranky and overheats. So we shut it off for 6-7hrs at night when its cooler. Also power outages can happen when we aren't home to start the generator. The chest freezer will last up to 2days longer than an upright if it is kept closed tight and the outside temperature isn't to high. Given unlimited funds, and hard wired generator that would automatically power up??? I'd have 2-3 uprights instead. But alas, such is not the case. So I chose the practical route.

My friend went to culinary school and taught me a better tasting method if you have to taste a lot. Using two spoons (Or a spoon and your stirring utensil) - one spoon (or stirring utensil) scoops up some sauce and you pour it onto your second spoon without them touching. You can taste from the second spoon and keep it for the next time you want to test the sauce. This way you only dirty one extra spoon per person.

We have a ministry that we do Bible studies in different communities every night of the week so I needed ideas on how to have meals at the ready. I’m intimidated to try this but I like the idea of starting small like you said in one of your videos.

What a great video! I spend Mondays cleaning out the fridge and the freezer for food that needs to be used or isn’t being eaten. I usually end up making a nice soup and just add some rice to it when I heat it up. I like to also go through the pantry and see what’s getting close to date so I can use it up as well. Thanks for the wonderful ideas!

I use ziplocks in my freezer as well and I reuse them afterwards by just washing them out well so there’s less waste. I love that I can get them to lay flat, as you mentioned it takes up way less space that way! I also use them for homemade “wet dog food”. One of my dogs can’t chew up kibble anymore so I started making my own wet food for them in big batches, a month or so worth at a time and then I just pull a bag and put it in the fridge. I definitely need to find more casserole dishes/lasagna dishes so that I can do a bunch of freezer meals too. I was a cook for 10 years and while I still love cooking at home, some nights I just don’t feel like spending a lot of time doing it so this is a good inspiration for me. Thank you 🙏🏼 💜

@@RobinFlysHigh it’s mostly ground beef (cooked), quinoa (lots of people use brown rice but for some reason my pups like quinoa better 🤷🏻♀️) and veggies. I do 40% meat and then 30% each of grain and veggies. And we get this Thrive vitamin and mineral supplement powder as well as Herring oil at our local pet food store that we add in as well. I change up the veggies depending on what we have. For us it works out cheaper than the good quality canned stuff and they actually like it a lot better too. I toss the veggies into the food processor so that they are a small dice and just mix everything together, portion into a weeks worth or so portions and freeze. 💜 I tried feeding them raw and they literally turned their noses up at it and wouldn’t even touch it. Even tried a couple different raw ones with no luck so I started doing cooked and they scarf it down. I feel a lot better making it myself too because I know exactly what is in it. 👌🏼

Your meal prep videos always give me so much inspiration in the kitchen! Tip for pouring sauce into a bag without it spilling, either put the bag in a bowl or over a cup and it will keep it from spilling while you work on the other bag!
