So milk chocolate and dark chocolate are made from the solids in the process, and white chocolate is made from the butter in the process. They both come from the same seed so white chocolate is...chocolate.

In a technical sense, I think we have to call it chocolate. It takes a part of cacao and incorporates it into a final product. As long as a *portion* of the cacao is incorporated, it is chocolate. We, however, can recognize that white chocolate just doesn't have as much chocolate as well, milk or dark chocolate. Therefore, it is technically a "lesser chocolate", even though it can be preferred.

White chocolate is pretty versatile if you're trying to make "chocolate bars" without making them taste and look chocolate-ey (e.g. strawberry choco bar, taro choco bar, etc.). You can just add whatever flavor and color you want, and it's pretty much done. Chocolate is still irreplaceable, though.

I remember the very 1st time I tried white chocolate, it was a white tobleron when I was 4 yrs old. Or maybe 5. I was at my father's boss's home and I saw that they have all sorts of chocolate on their pantry. He asked me which one I wanted, I pointed at white toblerone because , its my 1st time to see white chocolate. I even thought it was just milk. It’s not something you have all the time, it’s like a seasonal chocolate but I would still consider it chocolate because it still comes from the cocoa bean, it’s not like it comes from another source. Also, in this video I learned that you could do more with it, like add omega 3’s so it has its own purpose as an option.

Good video, with a small inconsistency. The Cocoa Butter texture is given, mainly by the triglycerides composition, not the fatty acids, at chemical level. Take the same fatty acids composition and content in a different triglycerides arrangement (e.g. interesterification) and Voilà, the texture it's not the same anymore. I know...I must be fun at parties.

If it is a high quality white chocolate, it very much has the fruity and herbal aroma of chocolate, it's just a different form of the cocoa. I love it! A luscious and warm treat. Also, there is nothing unhealthy about cocoa butter, or saturated fat in general, it is a neutral food, not inflammatory or anti-flammatory and it doesn't just free-float in your bloodstream and clog your arteries - that's an absurd claim that isn't backed up by even basic nutrition science. So enjoy chocolate, but the sugar is the issue, limit sugar for sure.

As a previous commenter stated, white chocolate should be considered a byproduct of the chocolate making process. This isn't, necessarily, a bad thing. Rum is made from molasses which is a byproduct of the sugar making industry. Rum is not sugar though in the same way that "white chocolate" is not chocolate.

Trevor the same process can b thought from olives and olive oil. The byproduct is relative. If cocoa oil is the byproduct, then olive oil would be as well. White chocolate is white because of milk added, otherwise would look just like any oil, a liquid thing. Cocoa is known for its healthy fatty acids, so cocoa oil is a very healthy source of monounsaturated fatty acid that could be used for cooking or dressing salads as well as olive oil. But to make it a desert we have to add a bunch of nasty things, but the oils itself is good and very healthy!

White Chocolate is still Chocolate it still has that sweetness. My sister who used to like eating the usual Milk Chocolate developed an allergy where her skins would developed hives if she ate it. At first we thought she could not eat chocolate anymore but then a friend recommended for her to try white and it had no allergic reactions since then her chocolate of choice is white chocolate.
