Very easy to prepare, but light and tasty dish, healthy because it is prepared with a huge amount of vegetables, which creates an excellent balance!
In a still cold cauldron, lay meat, onions, carrots, tomatoes, bell peppers, eggplants, any other vegetables, garlic, potatoes, peppers, cabbage and greens in layers. Cover with large whole leaves of cabbage and press down the food with a load so that the lid (or a dish taken instead of a lid) tightly blocks the steam outlet.
Put on medium heat for ten minutes, and then reduce to a minimum and cook for another 1.5 hours - or less if the meat is from a young animal and the cauldron is small.
