Because I don't like fried egg (spiegelei) I make this recipe with a soft boiled egg. Sometimes I cut the soft-boiled egg into pieces and mix it with the avocado, sometimes I put egg slices on top of the avocado.

Absolutely delicious 😋, but if the ricotta cheese and the avocado 🥑 salad have salt 🧂 I prefer don't put salt to the fry eggs, too much salt. Thank you 😊!
