I paid attention the next table chef, just seen how she cleaned up after cooking. I really admire that kind of culture. To me , it is not just cooking, but also how much dedication they put in the work, and how much they enjoy working. It is amazing.

was taken by coworkers to one of these in kyoto. I felt so bad because I'm deathly allergic to shellfish. The chefs were wonderful and kept my food isolated from everything else.

ahah, i was here :D. It's a nice restaurant inside a complex of a big hotel 3 min walk of the Yokohama station. (Literally at the end of the street ^^, but you have multiple entry) The view from the hotel is wonderful. To bad i can't post a photo here.

I went to culinary school and knew of two chefs that liked their meat well done. For them, it was a flavor thing, they prefer the taste of the meat well done. It's not disrespectful towards anyone, having a preference that is different from yours. If they ask you a preference, speak up about it. But, if it's a chef tasting menu, take it how the chef gives it to you.

wagyu is lovely, but for me it's all about that exquisite fried rice. the generations of knowledge and technique and commitment to excellence that you can see in the chef's movements are exquisite, and the finished dish is something i would far rather travel for than steak, no matter how good. this was an extremely educational video, thankfully free of a narrator, just showing us how it's done. thank you.

What are you on? This is just the head chefs preferred way of making it. The person right next to him made it the exact same way. For all you know it was some 2 star Michelin chef from France who made the recipe lol. Also having seen several hundred fried rice videos from Japan I can confidently say this was no different than what they make at the street vendor except the steak juices..... Like onion, garlic, and mushroom in fried rice. "Exquisite?.."

funniest part is that the chef did not comply XD. The first cut looked medium ish still, and the second cut was sliced up and then slightly cooked on the outside, but the centers were definitely still medium/medium rare. Bless the chef's heart.

I'm still trying to figure out the well-done part. It's like my brain is having an A5 meltdown. No, well-done doesnt have a different flavor profile than medium rare or rare. No, well-done isn't "safer" to eat. Yes, the chefs ancestors are crying. Yes the customer isn't always right.

There's Japanese restaurants that serve up just as amazing food (sans Wagyu) that charge a fraction of what's being served here.

Thank you for your interest in Japanese restaurants. The reason why I don't cut it is to make it more chewy after baking. This is because Japanese scallops are softer than scallops from other countries

I've been there, not a for a 430$ menu, more like 200-250$, and I honestly thought it was overpriced. The wagyu, prawns and scallops were beautifully cooked, but the side dishes were a bit underwhelming imho. I remember a course was fried rice with roasted garlic, and it was just that: fried rice, with roasted garlic. i like garlic, but that was quite monotonus in flavour. Also, I was there alone, at opening hour, that was the only available spot, and it was not a very joyful experience, being all alone. There was no atmosphere, and I felt a bit awkward seeing all that staff around me, just for me.
