Kate, I saw you using the sun dried tomatoes from the jar. We make our own dried tomatoes with our garden tomatoes, much less expensive! We use the Principe Borghese tomato, seeds can be gotten from Italy by mail order. You will get small tomatoes, about the size of a ping pong ball. When ripe, wash, cut in half, toss with olive oil and balsamic vinegar, salt and pepper, maybe some thyme, and garlic powder. Place on parchment paper on a baking sheet and bake at about 225-250 degrees F until shrunken and dried, about 3-4 hours. Pack away in jars and freeze for use all winter. Delicious!

You know what works a treat on squash is an old-fashioned grapefruit spoon with the serrations. Especially for cleaning the sides of the seed cavity. Never tried on butternut though. The ‘fire tool’ is a trivet, it’s main use is to open and close ‘the damper’ for heating your water from a back boiler in your fire or stove :), have to say artificially heated water is not the same as fired is, it’s much softer water, just saying, fantastic video Kate (as always)

Butternut squash is one of our favorite winter vegetables. This recipe looks delicious. Chestnuts are impossible to find where I live now. I used to live in New York state and chestnuts were available in every market. The whole meal looks wonderfully inviting. Thank you Kate. :)

Once again Kate, that was a brilliant use of tools. My husband would poke holes in with a fork, then microwave to soften the skin. I love Butternut squash. I've roasted, stuffed and made soup with. Its really hard to peel as well. Easier to just roast!

That technique of walking the knife with the stove tool is the same for bush crafters and called batoning. Thanks for that tip as I have had some cut fingers when my knife slipped. I use a clever. Thank you Kate and Anna for the Advent videos. You certainly have spoiled us! Your struggling with cutting of the squash reminded me of another cooking show where she took the squash (turban or hubbard) put it in a bag and then tossed it down her basement stairs. LOL She would have pieces of squash she then would cook. I have never had chestnuts. I am definitely curious. It is not something I would find locally. Kate and Anna have a lovely Christmas with friends and family. God bless.

I had planned on this little beauty for my Boxing Day feast but seeing you make it I think it might having to happen today, Sunday. That looked like cauliflower cheese too. Heaven sent combo. So good I am watching it twice in a row. Having seen the jaws of squash Im going to wrap the squash in tin foil first leaving the top end open and then fill them. I can see me having an accident trying to fit the two halves together. Love the Dad saying, hope you have them in one of your little scribblings books.

I just made stuffed squash last weekend. I change it up between rice or bread stuffing, depending on what we have on hand. Last weeks was venison, pecans , cranberries and bread stuffing. Going to give yours a go next time 💚

From fall to early spring we eat a LOT of butternut squash, with curry being a favorite. Love it baked, steamed, with a butter/salt/pepper. Or a drizzle of pure maple syrup. For curry I steam cubed red potato skin on. Sauté lots of onions, lots of chopped up garlic,. Steamed cauliflower florets, Steamed cubed butternut squash. Combine in a large stove top pan, add coconut milk, plain live culture yogurt, and my homemade garam masala or favorite curry paste. And lastly either fresh or frozen green peas. Then we serve it over hot Basmati rice, white or brown. My hen (Hannah) loved to wander in when I was removing the seeds from the squash, pumpkins and treat herself. So I started doing that outside...Noticed Whole Foods has chestnuts this year so I am tempted to make you stuffed butternut squash recipe.

@@missmayflower I have a thin blade paring knife that I have used to pierce - - - - - - - - - - - - - each side and then take a larger knife and slowly run it down the - - - - - - - to finish the cut. Or anyone with a cleaver and a wood rolling pin can do as Kate did. A friend uses a big butcher knife and her small hammer (laughing). Where there is a will there is a way.

Oh dear! How I cut mine is I get a pointed knife, insert the point about half way and run it around the squash and then crack it open. You’re funny, making that squash “talk”. You could do an entire video on that and people would love it.

I always enjoy butternut squash. Cubed. From the freezer. 😆 Chestnuts are part of my favorite winter memories from growing up in Philadelphia. Vendors with sooty black hands bagging them up in tiny brown bags. Such a wonderful smell and flavor! I must try your recipe - except with cubed squash from the freezer. Maybe I'll cook them in my soup crocks.

Looks delicious.... I have often wondered how people figured out how to eat things like this before there were knives. True funny story when my god parents where newly married. He grew up on the east coast she on the west coast of the states.. She had bought some artichokes and was somewhere in the house. She walked into the room where he was trying to eat the artichoke by pealing off the leaves. He says next time you buy theses get them a little riper...lol She of course busted up laughing and told him there a vegetable and have to be cooked had never seen one before.lol

Dear Kate, your fight with the butternut squash looks like pain. I saw recipes where the butternut squash is put in the oven for several minutes or maybe in the microwave and then they scoop out the flesh. Hi Kate, I came across this video this afternoon, weather is lovely here and I’ve been spring cleaning, having a cup of tea now......wouldn’t it be nice to do the same with courgettes.....the ones that become gigantic overnight 😀
