Selling as "ready to eat" dramatically increases the responsibility and regulation. I talked to the Health Department in San Francisco about this and selling as "wash before use" to restaurants is much easier as the assumption is that the customer will follow their normal good practices in handling food. If you harvest and package them before delivery you have to use an approved scale. If you sell trays of live plants for them to harvest as needed the unit of measure is the tray and you should just make sure the trays are relatively consistent. Personally I would not sell at a farmer's market because of the time involved in comparison to the unit sale. I am developing no-soil methods mainly for peas and sunflowers.

if you sell ready to eat there are some farmers market customers you may not be able to get too. Snap or Food Stamps can be used at some farmers markets. HOWEVER if you want to make into the 6 digits you are most likely going to have to scale to ready to eat as big buyers and clients are usually distributors not just the farmers market though many overlook the social aspect of the market.

Have the room and some basic basic building skills. You can build a walk-in cooler for pretty inexpensively. You don’t have to buy them get 4 inch foam put a radiant barrier on the inside and outside and a simple wall AC unit that gets down to about 30° will do the trick.

White vinegar or acetic acid is a viable sanitizing agent may need to spend more time in the solution. Again check with health inspector.

I'm at the 11:30 mark and had a thought about the Listeria experience. Perhaps a retrospective possibility to pass onto Chris if it suits you, Diego. I do wonder if that strain was perhaps introduced by the manure rather than their recoverable material. Did they test their uncomposted product vs the input manure for that same strain?

A steam sterilizer like those used in my cologne can run for 24hours to sterilize 4-6lb of substraight per watt of heat. A 2000watt can do about 500lb for $5. Extra step though

I think that if you can use grocery store 3% as a gargle it is safe to use for sanitizing plants, particularly as it will break down in light. I dumped some of that on a patch of mold on a test bed and it didn't kill the good plants. Consider Neem oil and oregano oil with a little bit of dish soap for surfactant (look it up :)) to use as spray for mold. Look up Harley Smith at NPK University to see that well-nourished plants won't be susceptible to mold.

@tangobayus that type of hydrogen peroxide has additives. You don't want those additives. The food grade is a more pure product and it is this reason that food grade is called for.
