LOL, I am a fairly old man working in an eatery dominated by aspiring young folk. I love the energy! Thing is, you have to nurture the people and you have to encourage the skills without killing the spirit. I have worked, sadly, alongside those who can crank out entrees by the recipe all day long and yet can't do a great special because the spirit has been beaten out of them and they are afraid to take chances.
