Sheet pan plus rack… lay your breaded meats on, cover and refrigerate while it rests while you are prepping other items. I do put smaller stainless sheet pans in my dishwasher.

I grew up eating steamed crab my dad made. So delish bc the sweetness of the crab is enhanced that way and he didn’t even need to add any seasoning. It’s commonly a Cantonese-style of cooking crab.

I have used those whip canisters before. You fill the canister with your heavy whipping cream, vanilla and powdered sugar, put the top on and you attach a co2 canister to it and shake it a bit the co2 does most of the work for you. It comes out like the nice rich whip from some coffee shops.

25:22 Pizza Crisper: It's a pizza 'bakeware' option. Makes pizza crust crispier than baking on a traditional pizza pan. Once the pizza is done baking, THEN you transfer the baked pizza to a cooling rack (like the one you mentioned you use for such purpose).

I need that noodle strainer! Any fresh pasta/noodles usually have to be cooked in a short time so thats great for making sure you don’t overcook from scrambling around trying to find them in the pot.

If ur using too much whip cream its easier to make it with the dispenser but you need to have co2 carrriges for it

Also in regard to the whipped cream canisters, yes it does require a refill of nitrous oxide stored in these shiny metal bullets to whip the heavy cream you put in there. In recent times ppl have been using these “recreationally” as an inhalant, (aka whippets) so pricing is probably ridiculously high on these boxes of n20

You should watch for a local auction for used, scratch and dent or surplus restaurant equipment. Do a video. Take an actual restaurant manager with you.. maybe someone retired.

You can season carbon steel just like you can season cast iron pans. The dark woks found in Chinese restaurants are normally seasoned carbon steel.
