At 13:20 you mention the syrup is 4 cups sugar and 12 cups water...did you mean to say 16 cups water maybe?

Great tip with the olive oil for the sticky residue! I get the same sort of stickiness when I process wild elderberries, too, and this works like a charm!

You are so right about having your kitchen ready , thinking assembly line makes this job a lot easier and no cross contamination to ruin all your food in the end. Having everything set up is very important to me , and no bacteria . Both of y’all are great teachers, just naturals at it.

Funny grandma never taught us water bath canning just pressure canning, that was so easy I'm going start water bath canning! And the info about stove and pit bottoms, Thank you for all your tips much love from So.Cal💟

@Crazy Critter There are still things that MUST be canned in the pressure canner. They ARE NOT just interchangeable! I still have to look everything up to see which food goes in what type of canner. I believe it's something to do with the acidity of what you are canning.

I use my pots like you’re and I also bought the ball water bath canner(electric)it’s huge and you can steam and cook stews ect in it and it get hot fast

I'm BRAND New to canning. I've not water bath canned or pressure canned. I did buy A Presto pressure canner for glass top stoves just like the one you use when.pressure canning. So I'm going to be watching LOTS of your canning videos. :) Thank you Wanda.

I don't know if they would still be safe to use or not anymore. I remember my mother canning in them all the time. Research it before using. Something comes to mind that if they have 3 raised dots near the bottom of the jars they are ok to can with. They use to make them so you could reuse them before they switched to thin glass jars and now plastic. Don't take my word on it though. Do some research first.... If nothing else, they could be used to store dehydrated items in them. I save all my pickle and mayo jars for that purpose and use my food saver jar attachment to seal them.

I can in the old glass jars. At least these old ones are truly 32 oz. Lucky you. Jars are getting so exposed.

Jomama 02 I’ve been using them constantly and, as with any canning jar, you just have to watch and inspect as you open each one. In the years that I’ve had them I’ve only had around 2 fails. 😃

Good teacher, thanks! Learned something new today! Another good tip is, when I can I put a pair of the household cleaning rubber gloves on. I turn the cuff so water doesn't run up my arm. But they are a tight fit, and I feel like I can work in them well. They take heat well. I can handle my hot jars both going into the canner and coming out of the canner too! After all, if you can wash your dishes in very hot water with tgem, you can handle hot jars. AMD it helps these old hands grip too! Let me know if anyone else ever does this.

Ms Wanda, I just love you! My grandma would can whole figs. The syrup and figs was so good. There’s just nothing like a fig on a homemade biscuit! Thank you for the memory bod my grandma’s table. May our Savior continue to bless you and Danny. Stay well.

Yes! Tip #1-clean the kitchen first. Makes me crazy trying to find things and move things and clean while I am working. I use my dishwasher on rinse, no soap to heat jars so that has to be empty along with the sink. So there is usually at least 1 dishwasher run involved in cleaning the kitchen. Gotta run and check the mail! Got the delivered text from my pampered chef order while I was watching! ❤️

OH Wanda I wouldn't cook or do anything in my kitchen if it wasn't clean & tidy ( like my entire house & vege garden)- I also still have my Tupperware measuring cups from over 45yrs ago & still perfect. l loved this video please do more. Cheers - Denise Australia

Great tip on the oil to get the sticky stuff off. We moved to the South 2 years ago and planted figs trees. I hope we get enough figs to can this year. I like to see a clean and uncluttered kitchen. The mayo jars are also honey jars. We have bees. Thanks for the vid.

Miss Wanda, I wish we had known about putting the oil in the bowl before washing it. That would have saved my sisters & I a lot of time when we were kids with my mom's canning... More thsn 50 years ago. Have a great & blessed day/week.

I was watching this to see if you and I can figs the same (we do) but, I am so very glad that your No. 1 tip is mine as well. I always clean my kitchen and mop the floor first, even if they don't look like they need it, then pull out my canning equipment.

What is the consistency of the figs after they are canned? Do they get mushy, or are they the same as they were fresh off the tree? Thanks for the video. Helpful 👍🏼

Awesome video Wanda... Question? Have you ever heated your clean jars in the oven instead of the stove top? I found it so much easier & roomer when I put my clean jars in the oven on the racks usually on their sides. I pre heat the oven to 275* about 15 mins before canning then I turn the oven off. That way I can grab a hot jar out of the oven & fill it up. I put the lids & rings in a bowl with hot water on the side, again about 15 mins before I start canning. . I have the Ball Electric water bath canner Love it.. Have you seen those.. So nice for making large batches of broth or soups. really great for water bath canning. When done it has a sprout on the side you drain it into your sink. :") I am so jealous you have such an awesome harvest of figs. Here in Michigan I have not seen such a thing. At least not in my area.. Big hugs have a great weekend. Miss you both..

Jars. Funny bit. I have Kerr, Compton, Ball jars. I also use certain spaghetti jars (classico) that have the mason thread. I have pressure canned in all of them of course. Guess which one is the only one that has cracked in processing in over a decade? You guessed it, Ball. Good tutorial on WB.

Thank you so much for doing this video. I don’t have any figs but, love to eat them when I find some. Last night I water bath canned 24 pints of diced tomatoes for the first time. This video was a good one. You’re a great teacher. QUESTION- Can you water bath can in aluminum pots?

@Greta Knebel I do. It doesn’t matter if the pot you process the sealed jars is aluminum. But you don’t want to use aluminum for cooking any food you can. And I wouldn’t use it for heating my jars and lids, just because I don’t trust it.

My water bath canner has a temperature gauge on the knob of the glass lid and came with a metal basket that lifts out and hooks on the rim on each side. Also, for those people who have dishwashers, I put my jars in the dishwasher and run them through a cycle. I take out hot jars as I need them while canning. I still put my rings and lids in boiling water even though it says you don't have to do that any more. I only use Ball or Kerr jars for everything.

I thought that was funny when you said Danny preferred the lids to be facing the front of the jars... but today when canning some pickles, i found myself doing the same thing! i couldnt NOT do it that way!! ha!

Those jars of figs look sooo good. The oil to get the latex from the figs off, also works for getting the sticky residue from labels off. I also use WD-40. Both of those work better than GooGone & are a lot cheaper. Blessings, Love & Hugs from Vicki in Ft. Worth, Texas 🇨🇱🇺🇸👍❤️🥰🙏🙏🙏🙏🙏🙏🙏🙏

That's why I like the steamer canner. It only takes 2 qts water. After many years they finally wore out. I had two and I do expect to get another one. When we bought them we could only purchase aluminum. Now they are making stainless ones. Our family isn't as big as it used to be, so we only need one canner.

In my younger years, we would can them by “hot packing”. Cook them till done, then jar them, turn them upside down for a time. Turn them upright and wait for the seal to take place. We never did “hot bath” them. Those were the good old days. Now , I can’t even find anyone that has fig trees.

Thank you so much for this video. I bought a bunch of used canning jars & a lot are pretty dirty. Do u have any suggestions on how to remove the grime & mainly the water sediment left on them?....maybe a boiling hot vinegar bath? I have a dishwasher but afraid that might bake on the grime even more? Appreciate your water bath tips.💕

You can clean, using any BIG receptacle, i.e., outside wash tub or CLEAN bathtub, to get first layer grime off, and use DAWN soap. Rinse, air dry, & then run through dishwasher.

I had to giggle Wanda, Danny likes the lids to line up with the words on the jar and you do it? Tell him the kitchen is your domain and to stay in the garden. Lol. Funny how men have their pet peeves! Mine sure has his also. Lol. I never knew that figs had that latex stuff. Learn something every day. I don't know if I've ever had a fresh fig before. Only fig newtons which I love. Very informative teaching video! Loved it.

Wanda I'm right there with you about starting off in a clean kitchen. Best tip ever. I have a question about the lemon juice. Is it ok to use fresh lemon juice when canning whole figs or preserves or best to use the lemon juice in the jar?

I totally agree my kitchen has to be cleaned and everything put in its place then I scour my sink and sweep my floors.. I have bad knees and am really bow legged so I have to use a wheelchair most of the time and it brings in a lot of dirt and I'm a barefoot type lady lol

Ms. Wanda, have you found out that the new canning lids lose out of the sides after canning? I don't think I like the new ones, due to the fact I am having a lot of fails with the new lids. What are your results?

I can many cases a year. Hardly ever have one not seal. Maybe 3 or 4 a year. But canning salsa I had 3. So you are right they don't work as well

I was cleaning my kitchen getting ready to can peaches when your video popped up, so I watched it first. Must have a clean kitchen before canning or you just have a mess! I looked to see if you had a canning video for peaches but did not see one. Do you have one hiding somewhere? If not, any tips? Thanks for the water bath beginner video, looking forward to the pressure canning one. I just bought a pressure canner for green beans but it scares me lol!

The one thumbs down on this video is from a miserable person...Great job deep south, thank you ,I just screwed up 9 jars of green beans trying to bath can them...they got rancid in 2 days flat and ruined them all

Maybe not a miserable person at all. Maybe they just hate figs. Don't be so quick to judge anyone. It doesn't make them a bad person. It's just a expression and thumbs up or thumbs down helps Wanda's channel, it doesn't hurt it at all. Have a wonderful day hon.🤗

Like the oil idea for fig removal. But I couldn't use that here. That's a lot of oil down my septic system. I wonder if vinegar would do it.

Question on canning green beans. I've pressure canned a couple of batches of half runner beans and they look great. Last night I canned a batch of pole beans and they look a little cloudy, the jars did seal. Did them all the same way. The pole beans that I shelled, the beans are a light rust/tan color and the water in the beans seem to be a lighter version of than tan/rust color. Is this normal?

With the shelled beans in it, yes makes a difference but they are fine. Always test them when you open though.

Yes, I have dehydrated and freeze dried the figs. We loved the freeze dried better.

I can't stand a messy kitchen no matter if I just start cooking or canning. Then again, I have no counter to talk of. Someone borrowed my old waterbath can pot, never returned it, now that I know it takes much longer I will gladly keep using my stainless pot, though it holds less. I doubt though I will be canning figs, only have one fig bush and we eat them as soon as they are ripe😃
