@Crazy Critter There are still things that MUST be canned in the pressure canner. They ARE NOT just interchangeable! I still have to look everything up to see which food goes in what type of canner. I believe it's something to do with the acidity of what you are canning.

I don't know if they would still be safe to use or not anymore. I remember my mother canning in them all the time. Research it before using. Something comes to mind that if they have 3 raised dots near the bottom of the jars they are ok to can with. They use to make them so you could reuse them before they switched to thin glass jars and now plastic. Don't take my word on it though. Do some research first.... If nothing else, they could be used to store dehydrated items in them. I save all my pickle and mayo jars for that purpose and use my food saver jar attachment to seal them.

Jomama 02 I’ve been using them constantly and, as with any canning jar, you just have to watch and inspect as you open each one. In the years that I’ve had them I’ve only had around 2 fails. 😃

Good teacher, thanks! Learned something new today! Another good tip is, when I can I put a pair of the household cleaning rubber gloves on. I turn the cuff so water doesn't run up my arm. But they are a tight fit, and I feel like I can work in them well. They take heat well. I can handle my hot jars both going into the canner and coming out of the canner too! After all, if you can wash your dishes in very hot water with tgem, you can handle hot jars. AMD it helps these old hands grip too! Let me know if anyone else ever does this.

Yes! Tip #1-clean the kitchen first. Makes me crazy trying to find things and move things and clean while I am working. I use my dishwasher on rinse, no soap to heat jars so that has to be empty along with the sink. So there is usually at least 1 dishwasher run involved in cleaning the kitchen. Gotta run and check the mail! Got the delivered text from my pampered chef order while I was watching! ❤️

Great tip on the oil to get the sticky stuff off. We moved to the South 2 years ago and planted figs trees. I hope we get enough figs to can this year. I like to see a clean and uncluttered kitchen. The mayo jars are also honey jars. We have bees. Thanks for the vid.

Awesome video Wanda... Question? Have you ever heated your clean jars in the oven instead of the stove top? I found it so much easier & roomer when I put my clean jars in the oven on the racks usually on their sides. I pre heat the oven to 275* about 15 mins before canning then I turn the oven off. That way I can grab a hot jar out of the oven & fill it up. I put the lids & rings in a bowl with hot water on the side, again about 15 mins before I start canning. . I have the Ball Electric water bath canner Love it.. Have you seen those.. So nice for making large batches of broth or soups. really great for water bath canning. When done it has a sprout on the side you drain it into your sink. :") I am so jealous you have such an awesome harvest of figs. Here in Michigan I have not seen such a thing. At least not in my area.. Big hugs have a great weekend. Miss you both..

Jars. Funny bit. I have Kerr, Compton, Ball jars. I also use certain spaghetti jars (classico) that have the mason thread. I have pressure canned in all of them of course. Guess which one is the only one that has cracked in processing in over a decade? You guessed it, Ball. Good tutorial on WB.

@Greta Knebel I do. It doesn’t matter if the pot you process the sealed jars is aluminum. But you don’t want to use aluminum for cooking any food you can. And I wouldn’t use it for heating my jars and lids, just because I don’t trust it.

My water bath canner has a temperature gauge on the knob of the glass lid and came with a metal basket that lifts out and hooks on the rim on each side. Also, for those people who have dishwashers, I put my jars in the dishwasher and run them through a cycle. I take out hot jars as I need them while canning. I still put my rings and lids in boiling water even though it says you don't have to do that any more. I only use Ball or Kerr jars for everything.

That's why I like the steamer canner. It only takes 2 qts water. After many years they finally wore out. I had two and I do expect to get another one. When we bought them we could only purchase aluminum. Now they are making stainless ones. Our family isn't as big as it used to be, so we only need one canner.

In my younger years, we would can them by “hot packing”. Cook them till done, then jar them, turn them upside down for a time. Turn them upright and wait for the seal to take place. We never did “hot bath” them. Those were the good old days. Now , I can’t even find anyone that has fig trees.

Do u have any suggestions on how to remove the grime & mainly the water sediment left on them?....maybe a boiling hot vinegar bath? You can clean, using any BIG receptacle, i.e., outside wash tub or CLEAN bathtub, to get first layer grime off, and use DAWN soap. Rinse, air dry, & then run through dishwasher.

I totally agree my kitchen has to be cleaned and everything put in its place then I scour my sink and sweep my floors.. I have bad knees and am really bow legged so I have to use a wheelchair most of the time and it brings in a lot of dirt and I'm a barefoot type lady lol

Ms. Wanda, have you found out that the new canning lids lose out of the sides after canning? I don't think I like the new ones, due to the fact I am having a lot of fails with the new lids. What are your results?

I can many cases a year. Hardly ever have one not seal. Maybe 3 or 4 a year. But canning salsa I had 3. So you are right they don't work as well

Question on canning green beans. I've pressure canned a couple of batches of half runner beans and they look great. Last night I canned a batch of pole beans and they look a little cloudy, the jars did seal. Did them all the same way. The pole beans that I shelled, the beans are a light rust/tan color and the water in the beans seem to be a lighter version of than tan/rust color. Is this normal?

With the shelled beans in it, yes makes a difference but they are fine. Always test them when you open though.

I can't stand a messy kitchen no matter if I just start cooking or canning. Then again, I have no counter to talk of. Someone borrowed my old waterbath can pot, never returned it, now that I know it takes much longer I will gladly keep using my stainless pot, though it holds less. I doubt though I will be canning figs, only have one fig bush and we eat them as soon as they are ripe😃
