Hi Wanda, Can't wait until your cook book to comes out! I just ordered one for Mike (retired chef) as a gift, he will love it. Our fig tree is healthy however the figs are still green. We are deep soaking every 4 day because of the severe Texas drought. For 35 days it's been 104 to 110 and no rain. You can see in the last video we did. Thank God you and Danny are getting rain. You have been on our prayer list every day and God does provide and he will for us. We are looking forward to rain and harvesting figs. Good to see you Wanda, Blessings, Rochelle

Well, today was the day I canned 2 1/2 gallons of frozen figs per your directions! I had a yield of 12 pints of whole figs in simple syrup. And enough extra soft figs to make some jam out of! Wonderful!!! I do have a lot of simple fig syrup left over, any suggestions of what to use it for? Sad to throw out, it’s so tasty!❤️😘🙏🏻

My knowledge about canning is rudentary so I'm sorry if the question is stupid. Why don't you have to pressure can these? Does the lemon juice add enough acid so you can use the water bath canner instead of the pressure canner? I know the lemon juice helps to keep the color as well. Also, how do you keep the squirrels and birds from getting your figs before you harvest them

All three of our fig trees are full this year. It's weird, once in awhile we'll find a few that are ripe. But, most are still growing and have awhile to go. Wanda, maybe I'm missing something. But, don't you wash your figs?? I wash mine before I eat them. But, this will be the first year I can them. We've never had enough. We will this year!!!

Good morning Ms. Wanda. I've never had a fig before, unless you count fig newtons. What is the flavor and texture? How do you use them? There is one thing I don't understand. When I can green beans it says don't use the water that you blanched your beans in to fill your jars. Is it because of the sugar that you can use the juice when you jar them or is it the pressure canning method that makes the difference? Your figs look beautiful. I've been using the ForJars since last year when you put us on to them. I haven't had a failure yet. Thank you so much for the information you pass on to us. You are a gem!! We learn so much from you and your explanations are so concise and easy to follow. You do an amazing job Ms. Wanda. Love you and Mr. Danny so much. Blessings always, g.

@@elizabethjohnson475 I'm sorry if I offended you, you sound upset at my method. That's just the way my grandma taught me to do them and I've just continued to follow in her footsteps. If your methods work for you I'm very happy. I wasn't trying to tell anyone how they should do beans I was simply asking a question. I hope you enjoy this canning season. It's such a blessing and one I think more and more people are beginning to learn and enjoy. It sure is fun to watch the pantry filling up with food we've grown and preserved ourselves.
