All those are screaming about hygienic let me give you some prospective. In India street food business is a cut throat business. They are there for the locals not for tourists and they have to build trust with local for there business to succeed...so they can't afford to make you sick with there food or they will go under. That said street food are not for all stomach. My advice to anyone feeling adventures, go to the food stall where you see tons of locals standing in line for the food.

Delila Sarah Basically North indian food is more colorful than south indian , on top of it , it will have rich fat like panner ,cheese . South indian food are more spicy and we add coconut milk in every curry . To be more specify there is alot of different type of caste ,culture in north and south india , so each have their own style of cooking. it is very hard for me to compare . I am sure you know that india has a lot of different language among the states .

Gundeep Singh Of course I don’t expect exemplary hygiene standards. And neither do I fear to get food poisoning if I ate one of his dishes. But I would be a lot happier if he changed that dirty towel. He wouldn’t need to clean his fingers so often if he used a spoon for every ingredient (at the cost of time though). And he should cover the chopped onions in the background.
