Great video Kyle! A buddy of mine has two Bullets and uses them for his production roasting for his shop. He's been using them for a couple years with no issues that I'm aware of. The coffees I've had from him roasted on these has been great!

Super interested in this roasting series! Would love to see some behind the scenes stuff about how you're getting the roasting business going. When you mentioned scoring equipment, it made me think of how Doug Demuro rates cars on KZbin. He has a spreadsheet with a few different categories for each car that adds up to a total score ou of 100. Could be interesting to see a scoring system like that for coffee equipment based on like, ease of use, value, reliability, community, etc. Love the content!

Great video! Very excited to hear what you have to say about the Kaleido M10. I am starting a small roasting business(and I mean small) and actually chose the M10 over the Bullet(with price being a big consideration for sure). I should be getting it in mid Feb, pretty excited!

Thanks for the review. I’ve been home roasting for over 2 years. I’m currently using the Fresh Roast SR800. I exclusively roast Tanzanian Peaberry and have found a light to medium roast pattern that gets me excited to make espresso every morning. I use the Breville Barista Pro and a 1ZPresso K-Plus grinder. I think the Fresh Roast SR models have a lot to offer for the average home roaster at an affordable price.

I just roasted my first batch of coffee last week! I've just got a Nuvo Eco pan, nothing fancy. And some green Nicaraguan beans from Jinotega. But I'm super excited to get into it! Finally, on my 4th attempt I got some beans that I am really happy with 🙂 Very excited for this series

I just got that Nuvo Eco hand roaster ceramic oven, as well, and also some green beans from Jinotega, Nicaragua, from Primo. That first batch was pretty dirty, but once I figured out what I was doing wrong, I've had nothing but good, clean taste from the cup, and the smell is amazing. Takes me 20-25 minutes from start to finish, with the clean, freshly roasted beans cooled off and stored, waiting to be ground and drank in a few days. It's actually pretty fun, and you get some amazing coffee out of it if you do it correctly.

Awesome! Been eyeing this new version for a whiiiile now, might pull the trigger next year and finally start my micro micro roasting company haha. Congrats on the start of your new company!! Also it's great to see another video like this from you, I'm having flashbacks to your Bianca video years back that ultimately pushed me to purchase one. Been super happy with it, so I'm sure the bullet will work well for me! I've actually been using the Sandbox R2 and it's been... interesting... lol I think I'm trying to use it the way I'd use the bullet or even a production roaster, and it's just not the same. You're note about the fan cooling is interesting; just heard Rob Hoos talk in a Mill City webinar or something and he says one of the first things you should do with any roaster is find that point at which the fan starts to 'cool' the drum down. It's different for every roaster, but knowing that means you can have an optimal fan speed for best heat transfer. Sounds like you found that spot!

I've been using a Behmor for almost 8 years and finally looking to upgrade. This roaster has been in my sights lately, but you're right that $3500 is a rough pill to swallow for a fun new learning experience.

So great to see you getting into roasting videos! I've been a home roaster for over a decade, and have owned the Bullet for over 2 years. It's a great machine, as you said. A couple things I noticed in your video, though. 1) I think advising people to clean out the chaff tray every 4-5 roasts is borderline. Every 2-3 roasts is probably more like it but it depends on the beans used too of course. 2) I'm not entirely sure that the Bullet lacks convective heating as much as you say. I took a couple Rob Hood courses on Bullet roasting and I seem to recall his talking about convective still being fairly active on the machine. You could check with Aillio and/or Rob to get more info. Looking forward to your other roasting videos to come! If you ask me, I'd say do the Behmor next (I and many others have started with that), and a series of videos on roasting tips/theory would be cool. Keep up the good work Kyle!

Hey! Good point on the filter. I had good success on 4-5 with light roasts. And no, the convective energy realty is true. Rob hoos actually made mention to this in a recent podcast. Of course a drum roaster is still primarily convection but I’m saying near the final stages when fan speeds need to be higher to remove smoke and create clean profiles, it slows the heat transfer rather than speeding it up like most convective systems would. But of course it still have convective energy!

A solid 9/10 vs other brands in competition. Two very important pros on the bullet that needs to be emphasized: the "automation side of it" (if you finalize your recipe, it's hassle free) and the "IBTS" (infrared sensor that needs to be cleaned every 50th batch). Been using the bullet for 9mos now and 900+ batches of roasts. From the 1st batch until the 20th batch of the day, the Bullet is very consistent with just a 20sec difference in the margins (cupping the 1st and last batch is very very similar). It's very important that you have your recipe per origin of coffee, just have a vacuum cleaner ready between batches and you are good to go with only 2-3mins of between batch protocol. The IBTS directly translates the color of the beans (must be cleaned regularly), and it's far more consistent than the traditional probes. From 300g batch to 1kg batch, drop temp on IBTS is very similar and really reflects to its color. The cons are objectively outweighed by the pros. It's 9.5/10 if they did not increase the price :)

It's definitely in a class of it's own. I wonder if they'll move into larger roasters (or even smaller). 1kg is micro roasting levels. I'd love to see something like a 300g roaster by them for cheaper.

To be honest, I use this roaster with p8/p9 and just raising fan speed (sometimes up to f9) until the end to control the roast. We’ve been able to get wildly clean coffees that we just can’t get with a Probat 12 kilo we’ve been using. I guess it’s just how you roast that really effects the flavor. What we also get is enhanced texture and sweetness too. Maybe that’s from the conduction?

We're going on 2 years with the Aillio Bullet as our sample roaster and a Dietrich IR12 as our production roaster at my microroastery/cafe. I've done as small as 100g samples and as much as 800g, but usually I do ~250g at a time. Most of the time, I actually like the fact that the fan is both for cooling and convection. I find that chaff isn't so much of a problem after 4 or 5 batches, but that's partly because of the size of my batches. In a single session, I'm usually looking at 12 roasts, and I like to empty the collector halfway through, but I won't vacuum it all out until after everything is done and cooled down. We got ours when it was still in the $2.5K range, which was honestly perfect for us for the amount of coffee we could sample roast at a time, especially at half the price of an Ikawa Pro 100.

This by far is one of the best video's I have seen on a roaster. We are a small micro roastery looking for our next machine. We are thinking about the Aillio Bullet but we are concerned about the smoke output. We are in shared commercial space with no ability to modify the building. However we have an commercial hood that we turn on to vent outside. Do you think that the Bullet could vent into the hood and exhaust out?

Good job getting ahold of one of these in Canada, how'd you manage it!? The Bullet is a really unique roaster at a really competitive price point compared to other 1kg roasters on the market, and I know some roasters/cafes on the west coast are using it as the backbone of their business which is pretty crazy to me, but all the respect and power to them! Hey, first of all great video! I am considering buying an aillio bullet at the moment to learn more about roasting and eventually grow that into like a small commercial thing. One thing I've noticed is that the bullet's power setting are only in steps from 0-9 whilst on the big commercial roaster I am roasting on at work has gas from 0-100 where I could choose any setting in between (let's say 73). How does that compare? What if I have to slow down the roast after first crack in order to stay close to my desired end temp but I could only go from P1 to P0. Any experiences or advice? would highly appreciate it. Cheers

If I live in Canada, where can I buy the 110-120V version of it? I cant decide between Aillio and Kaleido m10. Only thing I found is the 220V version. 😢

Have you tried the bullet with artisan? It would be interesting to see down the line how compatible these roasters are with artisan. Not because artisan is the best but because it's more widely used especially with home roasting circles.

Sweet Maria’s is great for small batches. Royal, forward, and other importers will do larger batches around 25 kg for home roasters.

Very interesting video! For the hobbyist, would you steer most people towards buying great coffee from a skilled roaster than trying to dip their toe into coffee roasting? I have family that wants to try coffee roasting, but with a sub $1,000 budget; I feel like it is better to just buy great coffee from people who know what they are doing (or am I wrong and is the process not as difficult to get right as I perceive it to be)?

Cool! I might have to pull the trigger on it. I don’t think my wife will be happy with it in our kitchen next to my espresso machine and grinder. When you say it emits “smoke” can I tell my wife it creates a fresh roast coffee aroma?

Hi. What a great video. Finally, someone makes a series about how to roast coffee. I have a Gene Cafe cbr-101, and I'd love to see a video on how to use such a cheap roaster. The Gene has a lots of limitations compared to more expensive roasters, but I find, that I can get some pretty good results. Due to the limitations I find it hard to transfer your advice from how to use a roaster like the Aillio Bullet to how to use a roaster like the Gene Cafe.

As someone with a bullet and a very small roasting company, I wish they made it smaller for people that just wanna roast for themselves. Unless you have a family with 5+ big drinkers, I think it's overkill unless you just want it to have fun and spend money. *My Bullet has also had a lot of glitches. Their customer service bends over backwards for you but I'd still rather not have those issues at all and I've lost a lot of orders due to those glitches

Are you certain there isn’t enough airflow in the bullet for adequate convective heating or is that just an assumption based on how higher airflows cool the roast down?

I didn’t say that. I said past f5/f6 it begins to cool leaving the need for too much conductive. This is especially true if turning up the fans at end of roast to eliminate roasty flavours since this isn’t smoke incinerating.

Okay. I see what you were saying now. The way it was set up in the video caused me to misunderstand what you were saying. I do find the fan speeds to be adequate. I usually live in f2-f4 with a lot of success.

I can’t make up my mind on the Bullet’s conduction based heating. Rob Hoos insists that “heat is heat” regardless of conduction vs convection. If I do two roasts, one on the bullet and another on a probat, and both hit all the same time/time markers, how does the method of applying heat change the outcome? It’s not like there’s flavor in the energy itself. That being said …in the back of my mind I still suspect that there’s got to be some difference in the end product, I just can’t explain how

There are many different claims from different sources. rao claims that too much conductive heat can cause a less transparent cup with more tar-ry flavours because conductive will often transfer heat less uniform than convective. But don’t be mistaken, the bullet still uses both as it needs to. But when the fan is turned up past f5/f6 it can start to have some negative effects

How are you people losing the top cover?! You’re not the only one. It lives on top of the bullet at all times. Pick it up, use the hopper, remove the hopper, put it immediately back. It leaves the bullet for no more than 20 seconds.
