I figured out the gummy issue. It is not the brand we were using. Basically if you use a regular small pan it doesn’t allow moisture to escape and doesn’t cook evenly leaving you with a gummy pancake. I just purchased a pancake pan 10 inch in my case and came out perfect even though i used same ingredients.

I'm so excited! I made these for lunch and they're yummy! My coconut milk was quite a bit thicker than yours (with no thickeners or guar gum), so I used most of the can and had to add another 3/4 to 1 cup of water to get the right consistency. Then I had to make sure I didn't add too much batter to the pan, and that they were cooked really well through before I turned them over. (I'm high altitude so it didn't surprise me that I often had to cook longer than the 4 minutes.) I learned that they would bubble up at first, and I needed to wait for the bubbles to cook, and then most of the bubbles would deflate when they were cooked well enough to turn over. These ARE a game changer, thanks so much Michelle!

@@MicheleSpring Yes, I did use a non-stick pan, but it hadn't been used in a long time and was not "seasoned" enough, if that makes sense. It perked right up when I sprayed it with a little oil. With the extra water, I did get more flatbread out of it, maybe 7-8. I don't know for sure because we kept eating them ;) . The brand I use is Golden Star coconut milk.

I was on AIP diet year ago, and I came off of it. I think mostly because I didn't like any breads. I am back on diet and I tried your wrap recipe, right now I have tiger nut flour, I'll get cassava later w/subscribe and save from Amazon. Wrap came - excellent, I gave a friend to try, who is not on AIP and she liked it too. I only have couple lazy suggestions: I used potato musher with small holes to brake lamps in tiger nut flour. Also I used Bella Electric Ceramic Titanium Griddle, you can fit two large flatbreads at the same time. I just made (10) breads for my freezer in no time. Thank you very much for your recipes. I tried gyro as well and it is really good.

I was not a chef, but I did a lot of baking. When I was diagnosed with Celiac and tried to make bread, I was always disappointed, and just stopped trying. I guess I have gotten used to eating GF. The odd textures have grown on me. It's been so many years that I have not had gluten, I've forgotten what it tasted like.

All nuts are not allowed for strict AIP protocol.. I have been on AIP for one month. You can add it in after the protocol is done.

Thanks so much for this!!! So quick and easy and it’s made AIP so much easier for me! I made it with arrow root and the texture was a bit sticky, almost like it wasn’t cooked so I had to cook it a lot longer and finished it off in the oven. Tasted fab though. I’ll try it with Tapioca flour next x

When I make these they are gooey in the middle so I put them in the oven at 350 for 10-15 minutes flipping in the middle and that seems to get the gooey out.

I just recently discovered your Channel. I've had thyroid issues for many years now, and in 2020 I was diagnosed with Hashimoto's disease. Even with taking my medicine, I'm finding it very hard to just function, so tired all the time. I found the "Whole30" book at Half price book store. Just started to read it when I found your channel. I feel that if I am capable of giving up pop because I had high BP, I can give up what is expected to be on the Whole30 and possibly try AIP protocol.

So I tried this before reading comments. My grocery had Otto’s cassava flour. I used that and tapioca flour from red mill. So gummy. Even the oven tip didn’t help much. Tried again the next day using Caputo’s gf flour. (Not AIP compliant however. I am working up to being that committed 😜) this worked much better. Needed 1 1/2 cans Goya coconut milk and had to spend time breaking up clumps. 4 minutes per side and then in 350 oven for 15 minutes. Gummy ness is very minimal.

They're the same thing. I don't know why they are named differently - it gets so confusing! Same with arrowroot - starch, flour, powder - all the same thing.

It's one of the Willams-Sonoma All Clad nonstick pans, though, to be honest, I had to get rid of it since I heated it too much by mistake after this video and the nonstick stopped working. Oops. So now I've got a much cheaper A Henckels nonstick 8-inch pan that I got from Bed Bath and Beyond that seems to be working just as great.

Tapioca is AIP compliant? I thought AIP was only nutrient dense foods? I thought both tapioca and cassava were starchy with not a lot of nutrients

Yes, strangely it’s AIP compliant, you can find them in s lot of AIP recipes like bread, desserts etc. IMO it’s not only empty nutrients wise, it’s also harmful

@@janellemilazzolau1288 Maybe not if you're healthy and eat in moderation, although it's high in carbs and low in fiber, protein compared to other flours. But some people are allergic to it. And for people who already have low levels of iodine, eating cassava might make this condition worse cs it lowers iodine absorption It might also lower levels of thyroid hormones. For people with thyroid disease, it can produce toxins that can slow an already underactive thyroid, especially in the presence of an iodine deficiency

I typically don't, but I have a newer nonstick pan that works really well. If you don't have a nonstick pan or if yours do stick, then a teaspoon of oil should help.

Thank you for this great video! Now I got confused: On Wikipedia I read that Tapioka is the starch made of Maniok which is another name for Cassava. So whats the difference? Is it the same plant but differntly processed??

yep, same plant, different processing. The cassava root is made from peeling, drying, and grounding up the entire root and the tapioca starch is made from pulping and pressing the root - and only the dried starch left behind after evaporation is what is then ground into a powder.

Maybe try less? I think I will weigh everything before I make it, so I can peek and tweek it if I have the same problem. Tapioca tends to be a bit gummy, and I don't really like it. Arrowroot flour is a little better, I think so anyway. Elevation could be an issue too.

I don't think they do at all, and I'm super sensitive to coconut taste. I only like it in certain applications and in bread is NOT a place I'd like it

I haven't found it in any stores either - I always buy mine from amazon. This is the flour I always get - amzn.to/32EbuOd (affiliate link) and this is the Rootz tigernut butter I like (it's expensive, but used sparingly it can last for several months): amzn.to/33xAQyg . I DID see an article about 2020 health food trends and apparently places like Whole Foods may start carrying the flour at least. It'll be interesting to see if that happens - very helpful if so!

Is 3/4 cup REALLY the amount of cassava and arrowroot powder required? I feel like mine is too thick! I had to add water.

That's what I use and mine comes out perfectly. But again, the brand of cassava flour can affect it, the thickness of your coconut milk can affect it, etc - these ingredients, unfortunately, aren't all consistent across brands so there can be lots of variations. Feel free to modify it for your own needs though! No need to follow any recipe exactly if you don't find it works for you and what you're working with!

@@MicheleSpring How kind of you to get back with me. Oddly, despite arrowroot/tapioca flour being permitted on the AIP diet, I can not tolerate it. I formerly had ulcerative colitis and I do not do well with starches. After eating just one last night, I am having digestion issues today. So, most likely I will not be making these anytime soon. They were good though!

@@brendaschwieterman1350 ah yes, many people do have the same issues as you. Just because it's AIP-compliant it doesn't mean it doesn't affect people, and starches do tend to have that effect. After some healing though you may find starches more tolerable, so maybe try again in a few months! (These freeze well, so you could always just throw them in the freezer and then take out a small piece and see how you do with it)

Amazing!. Here in my country I can't find tigernut flour or cassava flour, but I've found whole tigernuts and tapioca starch. To make the tigernut flour do I have to blend the dry tigernuts on my food processor? Or should I make Tigernut milk and use the fibre that's left on the nut milk bag as the flour? Thanks!

I'm not actually 100% sure on the flour, but I believe the latter - making milk and then using the fibre is the way to go. Tigernuts are just too hard I think to grind into flour (as far as I know - that's one thing I haven't tried to figure out - how to make the flour!)

eh, unfortunatley I don't know the answer to that. I still haven't figured out why some people get gummy breads and others don't. I haven't been able to get a gummy one to even figure it out! I had one viewer mention that microwaving a bread with a gummy center seems to help, so you could try that...

Did you use the cassava flour? I've noticed it has a tendency to do this. The tapioca starch also comes from the same plant and would probably increase the effect.

I just made these today. Mine were slightly gummy too. The first one out of the batch was too thick and was very gummy. So I watered down the Batter a little bit which made the bread thinner, less gummy. I think they're still edible. I'm not sure if there is any harm in eating it if it's slightly gummy. I will try the microwave suggestion too. I will probably throw the first one out of the batch out. I am going to try a different flour brand next time. I used Bob mills cassava and Michelle suggests or prefers the Anthony's flour. I see that brand on Amazon but not in the store. I will have to get it from Amazon. I'm sure it is all trial and error making this. I will try the tigernut flour too. Good luck on your next time.

I'd start off with above 1.5 cups (12 oz) and if it's too thick, add a bit more.

So I was super excited to try this recipe but I’m not what I did wrong !! my “bread” came out gelatinous and translucent. when they cooled they still had a grayish color to them and they were very gummy. I used cassava flour and tapioca flour. Idk if something was wrong with a product I used but yeah ://

yeah, as I just commented to KonaCan above, it really depends on the cassava flour brand you use. At least I think that's it - it seems to be the common thread between the people who have gummy ones and ones that come out good. I've only used Anthony's Cassava flour and mine have come out perfectly every time. I had NO idea prior to making this video how different each brand of cassava flour would be - I naively thought cassava flour was cassava flour, but I learned my lesson and won't be sharing any more cassava flour recipes!
