Ingredients:
500g chicken breast fillets (cut into strips)
100g plain flour
2 eggs (beaten)
150g breadcrumbs (panko or regular)
1 tsp paprika
1 tsp garlic powder
1 tsp Chicken seasoning powder: I used Knorr amzn.to/3TWS6sV
Salt and pepper (to taste)
Olive oil spray
oven 420°F (210°C). 22-25 mins
Air fryer 400°F (200°C) 22 mins

Sriracha Mayo
Ingredients:
4 tbsp mayonnaise
1-2 tbsp Sriracha sauce (adjust to your spice preference)
1 tsp lime juice (optional, for extra tang)
Pinch of garlic powder (optional)

Best way to cook these. Have done them in my countertop convection oven for decades. Much nicer than deep fried. Lots of ways to flavour them from the bare chicken out to a sauce.

Shakey shakey! 😄 They look fabulous. I happened to go to a bulk style butchers today & bought a 5kg bag of chicken breasts among other things. Looking into my crystal ball, i can see yummy chicken tenders for the grandkids lunches tomorrow!

I also do the same with fish such as cod and, instead of bredcrumbs, I use crushed Rice Krispies which gives a crisper, crunchier coating.

Thank you. Mate I can tell you - which you won't see on the news over there - Chiangmai is a National disaster area - The ping river has flooded the city - I do actually mean flooded the city. The bridges over the river have been closed which has split the city into two. Rescue guys are all very busy along with the Armed forces. Boats going up and down the streets. Its made for an interesting weekend. Best, Rik

@@BackyardChef Correction Rik, the BBC covered a story on their Asian section “Watch: Elephants escape floodwaters in Thailand”, it’s available here online - all about the elephant sanctuary, no mention of the city being flooded & people being affected!🥺

I always buy a whole chicken and break it down. Two tenders an some breast meat. It's far less expensive if you are prepared to do the work. Gotta be honest I have done them both ways and 'for me' this is the best method. The rest of the chicken is legs and stock. I make a Mayo with just a dab of De Bomb mixed in for dipping.Nice one again Rik.

Almost exactly how I make mine, I just play with the spices, Sometimes I put an indian syle twist, Depends on my mood. 😀👍

Looks good and nice job. Something I do is allow mine to air dry on a rack about a 1/2 hr before cooking I’m not sure why but something happens , not sure what but they always see to come out more crispy. I see in the video that you seemed to experience it when your second batch came out better than the first. Cheers mate

Well, if you like it. It is too pale, it lacks all the valuable fryer vitamins. I stick to the original if I want to eat something like that. But thanks for showing. 😉
