Ingredients:
500g chicken livers, trimmed
150g unsalted butter (divided into 100g and 50g)
1 medium onion, finely chopped
2 cloves garlic, minced
2-3 sprigs fresh thyme (or 1/2 tsp dried thyme)
60ml - 2 tbsp brandy (optional)
Salt and pepper, to taste
60ml - 2 tbsp heavy cream (optional)
1 tsp ground allspice (optional) Recomended
Optional: Extra melted butter for sealing

I made xmas cakes last year and soaked the fruit in brandy then kept the fruited brandy which was left over, put this in my chicken liver pate and it was the best thing i have done in my cooking journey. it was fantastic.

The same receipe my Grandmother used except for addition of nutmeg not all spice. Sometimes she made it using rabbit liver which I thought tasted better. Thank you for reminding me. Carry on showing wonderful receipes.

Tarragon works well here too. If you want even less fiddly use a beef or pork liver. Not quite the same flavor but so what. These are great, and this one here is spot on...good one Rik.

👍🏻 Fabulous! Although i do prefer cooking it all the way through. Nice touch with the fresh thyme in the butter! When i make it for friends and family, i call it _faux gras._ Each bite pure perfection with a sip of Port or Sherry 👌🏻

because chicken liver is so "fiddly", I use turkey liver for the pâté. it's easier to handle and the taste is nearly the same. I can also recommend adding a peeled apple. 1/3 onion, 1/3 liver, 1/3 apple. Give it a try ;) the all spice "trick" is new for me and i will def try it! thanks for sharing.

I never thought of allspice. Sounds great. I make my pate with Cape Ruby Port and a bit of lemon zest blended in. And a rosemary sprig to stick in the middle, it looks festive on the table. Thanks, Rik, you make me want to revisit old favourites!❤️😋

This is so SPOOKY - Mr Fox and I did our weekly shop today and got a kilo of pork loin for your Burstarma recipe. We used to have chicken liver pate on crusty toast, just like that, for a starter, if it was on the menu. We loved it. I've never thought about how it's made though. Easier than you'd think. Thanks for sharing another great recipe, Rik.

It's so easy to make a liver pate, I made some a couple of months ago and stuck in the freezer, might be using it up very soon 😊

While I use chicken livers for my New Years' traditional pate, I also take the liver from my Thanksgiving turkey and make a small batch. I find the liver is larger in the free range, farm raised birds. Butterball never again!

I would love to make that, but no chance of getting chicken livers in Wales, Asda have even stopped selling normal liver, the butchers shops are all closed or closing, got a job to get kidney now as well. all the wont cook cant cook brigade dont know what to do with it. but thanks for doing it.

I’ve made this for years but add sage and green peppercorns, no allspice. I use less butter as watching cholesterol 😊

My wife tells of time when they were children being forced to eat liver. She wore her robe to dinner once and put the liver in the pocket of the robe and forgot about it ...until her mother washed the robe. There was liver through out the laundry.😂 Now she loves liver paste. Go figure.

So you fry stuff in buttet, add dome more butter add some more butter put ut in a container and seal with butter. The you get some toast, buttrred of course, and spread the pate on. Obviously a man after my own heart, youll do for me old son!

Sorry mate I always equate liver to the oil filter in my car they both do the same thing. 😂. My mother loved liver and attempted to pass that love on to her 7 sons when we were growing up, she was however unsuccessful. The recipe looks like it would appeal heavily to those with a hankering for livers. Cheers mate

You can get it at the local farm shop or butchers. You won't get it in morrisons or alike

Not a Chicken liver pate - sorry got my own back! For the thyme! Ha ha ha. You could make a straight pork pate - the Ardennes has a stack of ingredients - I might make that. Bacon, Pork, Liver and herbs , brandy or cognac etc Thank you. Best, Rik
