Can I ask why you didn't blanch the potato prior to seasoning. We've always done that, we find it makes the potato softer inside.

I would just follow this recipe recipethis.com/air-fryer-roast-beef/ but swap beef for lamb. Alternatively if you have a leg of lamb this works well recipethis.com/air-fryer-leg-of-lamb/
