I have just spent the whole afternoon doing roast potatoes in the oven first parboiling them and then put them in the oven I have a gas oven which is not the greatest and it has taken 3 hours even though the potatoes were half-cooked to finish they're okay but I'm really gonna try your recipe it looks so good and easy

Instead of Italian seasoning and salt I use a package of Lipton Onion soup mix with olive oil and pepper. They are delicious. :-)

I like to mix my spices with the oil before adding the potatoes. This makes a kind of slurry with the spices and oil. Not sure if it makes much difference but that’s the way I like to do them.

Sorry I don’t know the answer, when I open olive oil it’s still good a month or two later. I store mine inside the kitchen cabinet. Maybe try a different brand of olive oil?

I never tried adding vinegar, but I don’t think it will make the skin crispier. The key to crispiest skin is to dry the potatoes completely with paper towels after washing them.
