Another way to make potato chips is using a potato peeler. Very easy and fast. No mandolin necessary. Comes out really really thin. Perfect chips every time.

Finishing it off in the oven is an awesome idea! I often found it a bit fiddly using only oil where some chips come out too brown with a slightly bitter taste and some just right and some slightly under. The oven seems perfect for smoothing it all out.

i once undercooked some potatochips and sliced them slightly too thick so they were super crispy on the outside and soft in the inside. they were amazing

I did the same when I started using a knife rather than mandolin and it was like a happy mistake. It reminded me somewhere between potato chips and french fries (or like a french fry with a potato chip crust for its outer layer). I found it difficult to replicate though.

Akis...Thanks for the excellent tips for fast frying, then baking the chips to avoid burnt spots. I will try your version, as I had once fried them awhile back, in an olive oil/vegetable oil blend with added sea salt and rosemary. They were good, but many of the chips were overdone. Your 5 step process will make sense. Many commercial chips use cottonseed oil, which I hear is not healthy. This way it's great. I wonder if it will work with sweet potatoes. Thumbs up!

So for flavors which "bloom" with cooking or heat, add a the beginning ... like maybe some cajun spices ... but for flavors which might "wilt" with heat ... then add after. Cool.
