Well, they weren't "thinking." Virgin America's board of directors agreed to sell majority stocks to Alaska Airlines. With a majority of shares, Alaska basically had majority decision making and decided on a merger. Richard Branson wouldn't have sold VX to Alaska if it were purely up to him.

I feel like Alaska's aircraft theming (including the new cabin) would be alright if it weren't trying to replace Virgin America's original styling, but they tried to please the VX customers with an experience that minimally reflects the old product.

This specific A321neo now wears Alaska's gorgeous "More To Love" livery. This variant is meant so that Virgin America's legacy can live on.

"Now"? That was the livery this plane received in production because it never received the base Virgin America livery. Arguably it makes no reference to Virgin America the same way the "+ virgin america" titles were removed from the 737-900ER version's engines once the repaintings were complete in 2019; they just say "Alaska" on each cowling with a bunch of empty space next to them, as though something should be written there, but isn't.

There was IFE and a tray table at my seat (and 8E), they were just stored in the armrest because there's more space between the seatbacks on the right side of row 8 compared to the left. The right side of the plane starting from row 8 until row 21 on the Virgin A321neo (or row 11 to row 27 on the renumbered/reconfigured Alaska A321neo, at least according to online seat maps rather than first-hand experience) is staggered back a bit, so seats 8E and 8F have more legroom than 8A/B/C (I daresay as much, if not more legroom as the old First Class).

The Boeing aircraft, yes. The Airbus fleet transferred from Virgin America (except one that was reconfigured) as well as the A321neo aircraft delivered to Alaska Airlines after the AOCs were integrated had the Red IFE (now rebranded as Alaska Beyond).

The amount of legroom on the right side of row 8 (may be renumbered to row 10 or 11 in Alaska's system now) is longer than that of the left side, and too long to reach the seatbacks if there were TVs embedded there, so the TVs swing out of the armrests like in First Class.

That I don't know yet, just that the Airbus crew began formal training in August Otherwise the only news I've heard is that the seatback screens will be turned off completely by November on aircraft not yet reconfigured with the Alaska seats

No, as far as I'm aware the food service options are still Virgin's via on-demand through screens (with more beverages on a separate cart service), there was no Biscoff on my morning flight either though I understand that's going away (or gone)

I was looking at going to Cali on Alaska in April and it was on an Airbus I tried finding which one but could not do maybe that is when the planes will be refitted

Last I checked, Alaska simply labels all Airbus equipment as "Airbus Series" without being type-specific, although the viewable seat maps differ depending on the actual type of Airbus (A319 has one exit row, A320 has two next to each other overwing, and the A321 has two in rows 8 and 21). In reconfigured planes, the first row of Economy/Main Cabin is numbered as row 6 even if it might physically be the 3rd or 4th row. Supposedly, flights on post-refit aircraft can be found in as soon as November, though at this time only the first one (N628VA) is in the process of being refitted. Furthermore, I've recently learned that crew cross fleeting will begin after January 30th of next year.
