This week, we’re bringing you the third video from a series that we call Home Brewing with April.
We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
As we are travelling frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
We’re following up the first two episodes with the final video filmed in Copenhagen, coming from the home of Alex, brewing an April coffee from Volcan Azul, Costa Rica.

These videos are fun and soothing to watch. The organic, not overly edited vibe really gives off the tone of making a pour over in the morning. Also Patrik's commentary is really instructive. An overall relaxed, less gear obsessed discourse is very good for the online community.

I love how simple and minimal his setup is. He's not drowning in lots of coffee gear, but what he has he clearly enjoys.

It doesn't always have to be complicated as long as the basics are done right. Do you have a similar idea behind your setup at home?

@@coffeewithapril Well said. My setup at home is actually almost the exact same as Alex’s, except I grind with a Kmax instead of a ZP6 and I mainly use Hario brewers (V60, Switch, and Mugen). I used to own way more coffee gear than I do now, but I’ve learned to enjoy having a more minimal setup and maximizing what I can do with it. Plus it feels really good to pass along some piece of gear that I no longer use to someone who’s new to specialty coffee.

I love the video and it's nice to see that people are enjoying brewing techniques similar to your recommendations. I do hope that we see different pouring structures and less familiar approaches going forward

I rinse my paper filters, but in triangle tests I found it's not a flavor issue as the primary concern. It's a consistency issue. Wet paper seems to brew more consistently than starting with dry paper. The wetting of the paper during brewing seems to be adding a variable. But starting already wet, that variable seems to be removed or reduced.

It's a hot topic these days. We rinse as well, and the idea of consistency makes sense. That said, we all now by now that there are a lot of different ways to get a tasty cup of coffee. During one of the home brewing videos we recorded, we got the opportunity to try coffee brewed with a paper filter rinsed with cold tap water, which also tasted great. Do you find that different paper filters behaves better or worse in terms of consistency when they are not rinsed?

@@coffeewithapril I've found rinsing to improve consistency regardless of paper (of course different papers produce different outcomes, but focusing here on consistency between uses of the same paper product), but I have not found the temperature of the water to matter for the paper. Cold had been totally valid for rinsing. Thermal management seems to have more to do with the brewer, and you can preheat the brewer in many ways, either during the paper rinse, by resting over your kettle, by putting in a hot water bath, etc. This is also why I've lately been preferring heat safe plastic brewers since thermal management is focused more on the coffee bed and concerns for the brewer itself are minimized.

@@error.418 Thank you for sharing. Would you always use your "brewing water" to rinse or would you for example use tap water (hot or cold) - even if it wasn't "suitable" for coffee brewing?

@@coffeewithapril Traditionally I would use hot brew water, but in testing determined it's not critical if the tap water is safe to drink and doesn't have any strong flavors. It's been generally fine to use cold tap water. In competition I'd still say use hot brew water, but in daily driving... you still get delicious coffee with cold tap and anything reasonable in between.

I also recently upgraded to ZP6 Special from C3. I would say the taste profile is more balance and has longer after taste. C3 would have sweeter and higher body, easier to get astringency when you grind fine. Taste wise, minimal difference really. But then the grinding experience upgrade is huge though.

I have the c3 pro and the zp6 as well, and I do found similar characteristics as mentioned. But to me, the taste difference is night and day, as Timemore burrs tend to give more chocolaty notes and muted flavours, it does produce decently sweet coffee but it clogs up all the time, and when using certain recipes the acidity is just non-existent.

@@Raditram Yup, generally I have to grind coarser with C3 to get cleaner cup. Also to avoid clogging.

The wierd thing at least in my case is that, how is it that when I grind coarse on the C3 it has more astringency it doesn't make sense hahaha I'm this close to selling it but I like the form factor for travel@@raymondfoo9045

I'm enjoying these Brewing at Home series! A question for you - what do you do to "calibrate a handgrinder"? (discussed at 0:46)

It means that when you have it set to zero, you can't tighten it anymore. It really only makes a difference when you search online for recommended settings. If everyone is saying that 4 is good for pourovers, you won't get the same results unless your grinder is calibrated.

Measured 10 kalitafilters and 10 April. Kalita all the same and April 2 off 😅. They both clog BTW.

I've been using the April filters for a couple months and I've never had a problem with them clogging. I think unless I ground very fine it would be hard to clog them.

Dear Patrick, Kalita wave filters do almost smell like detergent. Rasing those filters is necessary for not having flavors like detergent in your cup. In my view, they don't taste like paper, they smell & almost taste like detergent. In comparison, April paper filters don't smell or they get the smell of the water you brew with. There are other differences too. April filters are faster than Kalita's. You can go fine & have TTB for 2:30 which is not achievable with Kalita especially if you go fine.

I never think about the water quality. We have such good water here in Iceland. But I do know 2 things: 1. The water here is too clean for the best result. 2. The coffee here is roasted with the Icelandic water in mind as you would do anywhere in the world. When I go abroad I spend all my money at good specialty coffee shops. But last year I went to Catania Sicily and I knew I would not get good quality coffee there. I mean I only found one good coffee shop in Rome were I stayed the first 4 days. So I brought my own coffee and brewing gear with me. For travel I use Comandante grinder,Brewista Smart Scale and the Espro Travel press. Less than 1kg in total. And the coffee tasted good but not great. So what do you go for when shopping for water at the supermarket to use for brewing coffee ?

When traveling, it's usually really easy to find distilled water and then drop in a "Third Wave Water" packet. Since the packets are so small and light and each manage a full gallon, it's been reliable and consistent since distilled water is mostly the same everywhere and the packets are the same every time. I just buy a gallon of distilled water, mix in the packet, and leave it wherever I'm staying. It may not be the best option out there for coffee water, but it's great for travel. For example, for home you can get more detailed water control with products like the "Lotus Coffee Brew Water Kit," but they're less travel friendly.

I've been thinking about this after Patrik's comment about the Kalita filter and April filters. If you took all the different April brewers the flow rate varies between them. So they all give a little different characteristics. Would the taste be close to the same if used slower filter paper in the plastic April and the April filters in the slower drippers?

Thank you for watching and sharing. All paper filters worldwide are somewhat inconsistent. That's the nature of paper mass - however, the initial character of the paper filter deals with those inconsistencies in different ways. And you have a valid point. For example, instead of purchasing four different brewers, one can buy one brewer and four different paper filters and achieve many different results.

97mg/L bicarb and 2mg/L magnesium seems very average for brewing, it will flatten basically every cup.
